Our original date was last March and we were going to travel down to Asheville, NC with my Mustang to enjoy the mountain drives and waterfalls. Covid canceled all those plans. Our 3rd date is in November and we’re hoping to not reschedule again. (Initial cancel was days prior to our wedding so we’re mostly paid, which is why we didn’t elope - no refunds offered)
Any suggestions for a mid-November honeymoon on the east coast?
You could still do Asheville, part of the Blue Ridge Parkway may be closed due to weather but there's still hikes, waterfalls, hopefully outdoor breweries/dining, Biltmore, etc.

Right, I would still go to Asheville in November. We did our honeymoon at the Grove Park Inn Club Floor, which I highly recommend. The spa is great even in winter. Actually I've been several times but only in winter.
Late October/Early November is when we usually take a trip. It's off season for our timeshare so we get more bang for our points and it just works out now that it is usually Intersession for my kid so she doesn't have to miss school.
We have done: North Myrtle Beach, Charleston, Cape Cod and Orlando in the past few years. With the exception of Cape Cod all were warm enough to spend lots of time outside. Cape Cod was cold but still awesome even though lots of the toursity stuff was closed there was still enough to fill our time.
We were just in Asheville over MLK weekend. Late fall is a good time to go - generally not too cold. Biltmore is open with limited ticket entry times. We stayed at the Renaissance downtown and walked all over. Did a walking architechure tour, hiked in the NC arborteum, breweries, restaurants are open indoor/outdoor dining but limited capacity. I would hope this would change some by November. You can absolutely still hike and see the waterfalls as well in Pisgah National Forest.
The Grove Park Inn spa is amazing! I'd stay somewhere else, though. There are a lot of amazing hotels in Asheville. I've been at the Grove Park for "Biker Weekend," and it was very noisy & crowded. I think ex-H ended up with a partial refund for our room b/c it got so bad.

We initially chose Asheville because we could drive Back of the Dragon in Southern VA on our way down in my Mustang. :-) We ruled out TN when we discovered our honeymoon would land during their spring break and a large Mustang event. We were initially thinking Tail of the Dragon while also enjoying the mountains and tourist attractions in TN.
Fiancé also mentioned the Florida Keys and some other beaches along the East coast.
