We had Cajun seasoned grouper and succotash last night. I need to keep that in the back of my head. It was really tasty and the succotash was so flavorful.

But I did make something new on a whim last week - a fajita burger. I put chopped onion and peppers in ground beef (I think I’d prefer turkey though), along with taco seasoning. Mix well, make the burger fairly flat, and fry. It was really yummy! I topped with avocado and salsa.

I had to rearrange some of my dinner plans from last week because I ended up going to Costco after yet another dental appointment, and I ended up with more leftovers than I'd bargained for with some other meals. So a my list is basically a repeat from last week, because I pushed all the stuff that was pantry/freezer meals to this week.
Fri/Sat - leftovers both nights Sun - gnocchi in pink sauce, Caesar salad Mon - snacks (veggies, dip, cheese, apples, and a bunch of random cracker things from a gift basket) Tue - dragon noodles and egg rolls Wed - tacos and beans Thu - ravioli and garlic bread Fri - teriyaki chicken casserole Sat - jalapeno popper chicken casserole Sun - paneer tikka masala
Sunday: leftover mini meatloaves with mashed potatoes and corn Monday: my husband's 50th birthday, he wants homemade noodles in soup with Banana nut bread pudding. Tuesday: Porkloin with gravy, likely with more potatoes? I didn't expect to have so many left over from Saturday night Wednesday: Vegetarian black bean soup with grilled cheese or salad Thursday: tomato lentil soup from budgetbytes. Maybe I'll bake some bread to go with it. Friday: leftovers, I hope!!!
Also, aside from the guy being a dick, papa john's isn't even good. I'm not above a pizza chain (not everywhere has decent local pizza, or even a local pizza place available, I get that), but at least pick one that doesn't taste like crap. Domino's is orders of magnitude better than PJs.

That sounds tasty! Did you cook the onions and peppers before you mixed them in or leave them raw?
I felt particularly uninspired this week so it's based on stuff I already had in the freezer.
Saturday: chicken tikka masala (Costco), I made saag with shrimp, rice, naan, cucumbers Sunday: meatloaf, mashed potatoes, green beans Monday: pulled pork tacos with salsa verde and pickled onions, corn and avocado salad Tuesday: pasta with chicken/sundried tomatoes/kalamata olives/feta, salad Wednesday: frozen pizza and buffalo wings, veggies and dip Thursday: green chile chorizo-hominy casserole, broccoli Friday/Saturday: takeout- it's restaurant week (all to-go specials this year) and some of the menus look so good.

That sounds tasty! Did you cook the onions and peppers before you mixed them in or leave them raw?
They went in raw. They cook with the burger, and why I made it thinner than usual - so they took more of the surface area. They caramelize nicely!
