I'm going easy this week. It's just Dad & I so anything I make can be 2-3 nights of meals for us.
Tonight: matzo ball soup and falafel pitas Monday: chili chicken (Indian) and rice Tuesday: Taco Tuesday! This week is simple: ground beef tacos and standard margarita Wednesday: Cavatappi Beef Ragu Thursday: Pork Taquitos

Sunday: Veggie burgers, sweet potato, sautéed spinach Monday: Veggie burgers, cous cous, whatever vegetable looks good Tuesday: Big Salad Wed.: Tofu burrito takeout from my favorite place Thursday: Veggie burgers, no clue for a side, leftover veggie from Monday Friday/Saturday: Takeout/Delivery one night (no clue-I'll decide then), other night veggie burgers, leftover side, sautéed spinach
*As you can probably tell I bought way too many veggie burgers. I found SIX boxes in the freezer when I inventoried what was in there last week. This is "eat them up week" for dinner and lunch.
Leftover pork loin with green beans and red cabbage. Bratwurst stew which will go for two meals. Salmon and broccoli. Maybe something with chicken breasts. I'd like chicken picata, but I doubt we'll get to it this week.
I cooked the pork loin in a slow cooker, and I'm so disappointed with how dry it turned out. H says I had the temp set too high, but I followed the manual exactly, so... *shrug* I think I'll just stop trying to cook pork loin like that. It's not that much harder to sear and roast. I did make a phenomenal mushroom sauce for it, though. I'll make that again for the leftovers. Lord knows it needs a sauce 😕
