I impulse bought a giant bag of sprouted oats at Costco recently so decided to try overnight oats. I've been trying different recipes but I think that today is my favorite. It's a peanut butter banana concoction, plus I think I finally got the liquid to oats ratio to where I like it.
My car needs to be inspected tomorrow. It's 8 years old with 140K miles on it, so I'm hoping it doesn't need any work. I recently got new brakes and new tires so I should be good :fingerscrossed:
I just did a rough run of our taxes and we owe. Again. I mean, I anticipated it and we're budgeted for it, but it still sucks. H thinks that we should have more withheld from our paycheck, but I'd rather get more in our paycheck and earn a measly amount of interest in our savings account than give it all to the federal government right up front. At least we don't owe for the state, so that's at least something.
I can't believe it is the last week of January. Time is so weird lately, in some ways it feels like it crawls by, in others I feel like months are just disappearing. I usually don't like wishing my life away, but right now I'm a-ok with time going by fast. Each month that passes is one month closer to being done with COVID life.
The new semester starts today, and I'm taking 1 class so I have that tonight. I don't really feel ready to get back into school stuff, but maybe it will be good for me. I feel like I've been so scattered lately (even more than usual...) and I really need to get my shit together and start being more productive.
I have taken over the reigns trying to schedule my parents' COVID vaccine. I'm super frustrated. My 74-year-old dad is a cancer survivor, smoker, survived a "widow maker", and has T2 diabetes and I can't get him in anywhere.

My mother is having the same problem. She is in Delco - 67, cancer survivor, diabetic, high enough BMI - Everything to put her into the current phase. She cannot find an appointment ANYWHERE within an hour's drive of her house.
She said even the places that have the green dots on the PA map, by the time she gets through filling out the necessary forms for that location and gets to the end, it tells her they have nothing available. She's spent hours and hours trying to find something with no luck.

I took over my mom's -- I got her on multiple waiting lists, and then found out that the best way here to get an appt was to get thru the pre-screening on a certain hospital website, then to sit on the appointment page and constantly refresh it. You can only even DO the prescreen page when there are appointments, then by the time you get thru the pre-screen, the appts are usually gone. I refreshed, no joke, 50-100 times a day before I managed to get one.
All of this too say that i hear you - how can it be this way? What is happening to the elderly who don't have someone to delegate to? It's so frustrating.

That's the same exact thing happening here. I'm sorry. I'm focusing up near my house bc Montco seems to have more places. I have requests in I don't even know where, just waiting to hear back. I heard MCCC is supposedly going to become a super-vacc site but it doesn't look like it's up and running yet. I wish I could call my dad's GP. He's a family friend and has treated my father for decades. It says right on the hospital website not to call your provider though so I don't want to be a snowflake.
ohgillian exactly! My mother was handling it (she's way more with it than my dad) but she just gave up. I am much more savvy and proficient in this stuff so I said I'd take over. I had heard my neighbor got her parents somewhere in Quakertown so I started there.
The poor elderly who don't have someone to be persistent or access to computers! It's really hard to do it on a phone too. There has to be a better way.

My company (at which I'm just starting my third week), and we are doing our "(company) week." It is really cool, because they are telling stories about how the company started (a three year old start-up). It's a few hours of zoom calls every day this week.
I might say this a million times between now and like May, but I want it to get warm. We had just a deluge of rain last night and the dogs didn't even want to go outside. On Wednesday, we are supposed to get snow. I feel like my house is always cold and in the winter, there is no reprieve. In the summer, I can go outside and get warm even if my husband is freezing me out with the AC.
And on the note of it being cold, I am glad that I broke my ankle when I did. I'm just now starting to be able to walk normal-ish. This is a huge recovery. I would have never imagined. Anyway, I certainly don't want to be unable to walk when the weather is nice. I want to go on outings with my family without having to crutch or make sure that wherever we were going was paved so I could use my knee scooter. I should be able to do outdoor activities reasonably by the time the warm weather comes.

I don't like jarred garlic, the pieces are normally too big, it's too wet, it isn't as flavorful or fresh tasting.
This stuff is a fantastic option, though! It's crushed and tastes fresh.
Cute story about my dog from last night. So I let her out and there are 2 deer in our backyard. One is decently close to the back of our patio and the other is way back at the treeline. My dog is 12 and fairly lazy. So she's just standing at the top of our deck steps basically talking/growling at the deer. She finally runs down the steps and the closer deer just runs into the next yard, but my dog is like "eff this, and turns around to come back." The deer then sees her coming back toward the house and trots back to the middle of our yard.
It's obvious that the deer have realized that our old girl doesn't pose a threat and barely run away. One looked to be one of the babies we saw at the beginning of summer, it was still pretty small.
jinkies, how can people be against salt. Not saying to go crazy with it, but it is one of the most basic components to cooking and baking, for that matter!
My randoms: I am so freaking tired. I really need to call the doctor to see what my lab results are since they are not posted on my portal. I am talking feeling like you have taking a sleeping pill but without enough time to truly sleep it off. I have been feeling that way since the end of last week.
Also, I am more annoyed with Tyra from Unexpected than I should be. lol But come on! Your boyfriend is taking care of your daughter while you are away at school. You are angry about him "letting" the mom's boyfriend move into the house when he has no say over that at all and then you say you need a break.
I am planning to clean my closet today. Get rid of all the clothes and purses I do not use anymore. It is long past time to do this.

I don't have a sufficiently sophisticated palate to be able to differentiate between jarred garlic and fresh in a recipe that has 20 ingredients.
If I were making my own marinara or something where garlic is the star, I would try to use fresh, but otherwise... eh. That's true for all 4 things, really. If lemon is the star-- I'd use real lemon. If I'm like, putting some lemon juice in with my apples to keep them from browning, I'll just use the squeezy bottle. Etc.
This is not a super serious issue for me. I use a lot of garlic in recipes, and appreciate not having to peel and crush garlic daily.

LOL! I don’t like the jarred kind either for many of the same reasons as you - it’s wet, flavor is off etc. but I think those pieces are too small! I usually rough cut my garlic unless it’ll affect texture bc bigger pieces cook up so nicely!
I am all about the Kraft parm and I say this as a skilled Italian cook. I’ll use the nicer stuff for a fancier dinner or for guests or to put out on the table during g a big Italian meal but for every day cooking for my heathen family I’m using the cheap stuff. Sorry not sorry.
gummybear, I get the pre-peeled cloves at Wegmans (I am sure other markets carry them too) and I love them. Just make it a bit quicker to get the job done, but it is all fresh and not wet.
I'm not a salt snob, but I do have a preference. I use table salt for baking. Kosher salt for cooking. And pink salt for finishing. I personally think that they all taste different. That said, if all I have available is table salt, then that is what I use.
As for the rest, I use it all. Sometimes I'll go fresh, but keep the rest on hand at all times. I see no problem with this and certainly don't judge others for using them.
I was just reading an email form my grad school which announced that one of my former classmates/ fellow teaching assistant has been promoted to the program director of our program. And the email was aritten by a former classmate who apparently is now the new department chair. I'm so excited for them!! I also can't believe grad school was 20 years ago.
I am running a low fever - it's been between 99.1-99.9 all day so far. I think if it gets any higher I'm going to get a COVID test, but I don't really have any other symptoms (beyond my norm - my stomach was slightly upset this morning, I'm tired, I have slight sinus congestion, but those are all almost daily things for me in general).
I've been around exactly 1 person other than my H in weeks, which an HVAC guy who came into our house last week. If I got COVID from him, I give up. I haven't even been inside a store since October!
