Last night I made lasagna stuffed portobello mushrooms, adapted from a Skinnytaste recipe to use up some ground chicken breast.
Tonight we are having leftovers.
Other nights: Skinnytaste instant pot chicken parm with spaghetti squash Tortellini and spinach soup Steak over salad Maybe takeout one night. Lately we have been getting chipotle because we can control the ingredients and know the calories.
I also might make Skinnytaste creamy tomato soup in the instant pot for lunches.

I found these Tyson meal kits on Amazon fresh that are pretty easy and good enough. I had a green Chile chicken and rice one two week ago and am trying the Korean bbq one tonight. It seems to be a bit less work than the every plate meals and cheaper but it’s a one pot dish not a main with sides.

Update Thurs-lemon chicken (Italian seasoning package 1/3 cup oil and 1/3 cup lemon juice mix well and pour over chicken), veggies, scallop potatoes Fri-breakfast or take out
We have been doing Every Plate. So this week we had pork poblano tacos (really good), chicken and pasta I liked a lot and the rest of the family went “meh”, and shepherds pie that was okay but not as good as another recipe I use that’s easier. The other days were spaghetti, pizza, and Probably eating out one night.
I think I’m going to cancel Every Plate. I think I’m the only one enjoying trying new things, and honestly it’s more work than how I normally cook. I’m the queen of the short cut. Every Plate doesn’t do short cuts.
mommyatty , That has been my issue with meal kits as well. I have enjoyed the new things each time, but it is too much work and no one else will eat them.
