Chicken and more chicken this week. Beau and I have slacked off on our diet lately and need to get back into our healthy routine again. So lots of plain chicken and vegetables. Maybe a pork roast in the crock pot to break it up.

DH is leaving early tomorrow to visit his mom, not coming back until the end of the week. So I will eat leftovers and then figure out what he wants when he gets back. He usually eats like crap and drinks a lot so he might just want a salad or something.
Lately we’ve been organizing meal plans around countries/regions of the world. Just makes it easier to think of stuff over and over. We started this a few weeks ago with Mexican/Central American week (taco night, paella, tamale casserole) then Italian week, then East Asian. This week is Irish, for St. Patrick’s Day.

The cherry meatballs were carried over to Monday from last week as we ended up doing outdoor dining at a local place instead. Tuesday ?? Wednesday is Garlic Rosemary chicken Thursday is caramelized onion burgers Friday- take out
