I think I have developed a sensitivity to dairy. Not sure yet if it is lactose or more general; I am working through eliminations in my diet. This has made me very sad because most of my favorite treats are cream-based, so here is me taking a moment to feel sorry for myself.

Ok, now that I'm done with that I'm fortunate to have a nearby Whole Foods that has about a million non-dairy options for coffee creamers, which I am starting to work my way through. I've discovered that I prefer the creamers to the milk replacements (I used to use heavy cream in my coffee). I'm on the fence about flavoring. Any recs for your favorite brands or varieties?
Earth’s Own Cafe Edition Oat Original. I don’t like flavoured sweetners.
They also have a Culinary Edition that does a solid stand in as heavy cream for cooking. I’ve spend years trying to make a decent non-dairy white sauce and this is the best. It’s got the right consistency and it doesn’t really have a flavour. It thickens up perfectly.

If you like flavored coffees or drinks, I've gotten pretty good at duping the Starbucks Shaken Brown Sugar Oatmilk latte - regular non-flavored oatmilk and the syrup I can order from Staples (Fontana brand is the same as Starbucks) for $10 for a big bottle.
If you have a Costco, they sell two packs of the Silk Extra Creamy Oatmilk for like $6.

I've been cooking dairy-free for ~7 years so always happy to offer any tips! Products have improved immensely in the past few years, or at least the availability of them at a reasonable price. If you like goat's cheese, you may find that doesn't bother you as much. Since it's milk from a small mammal, it's often easier to digest for humans. I can get a really good mozzarella and a marble cheddar at my chain grocery store and they make cooking so much better. I can make a fantastic mac-n-cheese with the mozzarella and earth's own cream. It's never going to be the equivalent of a full dairy mac-n-cheese, but it's still really good.
Melt or Earth's Own butter are great for cooking too. I can get Melt in sticks so it's perfect for baking and I've been happy with the consistency of everything I've made.

Another vote for oat milk, I like the silk oatmeal cookie one (it’s just kind of cinnamon-y). None of the other fake ones have the right creaminess, it’s just thin weird milk in your coffee.

So my guy has issues with the protein in cow dairy, so we eat a lot of goat's milk and sheep's milk products. I was also a vegan/vegetarian chef for several years, so I know a lot of workarounds!
Because the casein amount is so low, we use International Delights Cold Stone Creamery Sweet Cream:
We don't do the flavors because he drinks coffee and I drink tea, and I'm not about to put caramel macchiato in my Earl Grey.
All of International Delight's creamers are considered dairy free; I found this on their website:
International Delight creamers do not contain lactose. However, they do contain sodium caseinate, a milk derivative.
If lactose is your issues, this may work! Btw, I do not work for this company, just a fan of this creamer.

Nutpods frothed in my frother is my go-to these days. GL.
I have tried two of the nut pods so far and they are my leading contenders of the ones I have tried, but I am still hoping to get closer to my original heavy cream if it is possible!
ETA and there are still many I haven't tried, hence this post, so I appreciate the recommendations.

This is the one I use. It froths up very nicely in my nespresso frother.
Chobani oat milk is the BEST. Was so mad that wegmans stopped carrying it when the released their own oat milk (not organic and has a lot of additives). I may have sent more than one message to them, lol
