DH is OOT again (36 hour turnaround after a two week trip, this one is probably going to be three, maybe four weeks?), so my cooking motivation is 0.
Sat: my parents had the kids, I got myself sushi Sun: sheet pan nachos w/ black beans, corn, and hatch chiles Mon: salmon burgers, broccoli Tues: chorizo fried rice with corn and peas Wed: roasted sausage and potatoes, green beans Thurs: Costco chicken skewers, pasta for the kids, cauliflower gnocchi w/ sundries tomatoes and parmesan for me, salad or whatever veggies are leftover Fri: kids pick takeout
I’ve decided it’s time for the kids to learn how to cook and help prepare meals. Monday and Tuesday: teach DS to make chicken tenders and Mac and cheese Wednesday and Thursday: teach DD to make chicken pot pie Friday and Saturday; lasagna from the freezer

Sunday - we had frozen pizza Monday - we had steak, baked potatoes, and green beans fresh from the garden Tonight - dd and I will probably have gas station food on the way home from school/volleyball practice. Ds will eat at his friend's and H is in town shopping and probably won't be home to eat Wednesday - ham and cheese quiche Thursday - Saturday is our county fair so either concessions or our 4H club is all bringing different foods to eat so we will do some of that also

Also I just looked at this week's calendar and we are going to be rushed for dinner every night this week, so... who knows. We may end up freezing most of this and doing a lot of takeout LOL.

It's the last of the summer peaches which is sadness for me.
In no order: open faced sandwiches with tomatoes, bacon and egg peach salad with sausages tacos chicken with green curry rice and asparagus or broccoli. will have to find an interesting marinade for the chicken
and then we've still got some peaches, asparagus, arugula, a lot of mind and basil. maybe grilled sourdough, ricotta and the above. or a panzanella or something. that would be nice.
Monday we had flounder crusted in Panko and Parmesan with roast asparagus and sweet potatoes. Tuesday: maple Dijon chicken drumsticks with egg noodles and steamed carrots Wednesday: maybe chicken soup with the leftover meat and noodles Thursday: burgers or steak with fries or mashed potatoes Friday: ughhhhh. No clue. Celebrate surviving the second week of school!

Wed: Leftovers (we’ve had a cooking-heavy week for sure and are in need of a fridge clean out) Thurs: Pizza (usually a Friday night meal, but we shuffled) Fri: Baked Rigatoni with Meatballs, Salad and Bread (my Mom will be in town passing through - so excited for the extra time with her!)
