It really depends on my mood. A lot of days I make an omelette and just throw in whatever I have on hand. I also like doing a breakfast charcuterie type plate so like soft boiled eggs, some fruit, some prosciutto, and when I'm eating dairy, some good cheese.
My breakfast yesterday was a bit less traditional, I did a cabbage hash with fried eggs on top.
Sometimes if I'm feeling motivated I'll throw together some chia pudding at night and just add some fruit in the morning.
I love baked oatmeal. Budget Bytes has a banana bread one that is so good, I don’t add the sugar and use extra walnuts. I usually get 5 or 6 breakfasts from it and just reheat in the microwave and splash a little milk on top. Super filling!!
Now that I’m stuck working from home, I find myself making plain oatmeal and adding applesauce. Or toast with peanut butter.
I also do not like yogurt. I also am not a massive fan of oatmeal (though baked oatmeal is OK & if you're alright with pre-prep you can make in muffin tins & freeze & nuke as desired), milk, or endless days of eggs. I mostly eat "brunch" now, which is kinda just an early, large lunch daily as I dislike most healthy grab-and-go or easy breakfast foods.
My favorite easy-prep in bulk, reheat later breakfast is a sheet pan of sweet potatoes, peppers, onions, & chicken sausage (I typically use TJ's, either roasted garlic or the spicy one) roasted. Do a smaller dice on the sweet potatoes so it all cooks at the same time. You could add other veggies or make it vegetarian & add beans instead of sausage. If you need to eat it on-the-go, you could wrap it reheated in a tortilla.
You could also make ahead some congee. That would be great as the weather gets colder.
Occasionally, I'll make ahead breakfast sandwiches (or, um, buy them frozen): fried egg, slice of cheese, maybe some bacon or ham or a smear of hot pepper jam, and an english muffin. I'll make a week's worth on Sunday night & then just reheat. I personally do not love non-commercially frozen egg, so I don't bulk make & freeze.
I also sometimes, especially this time of year, grill extra veggies at dinner & then have grilled veg with hummus or feta with some pita for breakfast.
And, soups! Easy to make a batch & freeze. If it's a pureed soup, you could even sip it from a coffee mug.
Generally, I feel better if I start my day with vegetables (as opposed to fruit).
I go through phases but my go-to is whole wheat waffles topped with cottage cheese and blueberries. I also like a smoothie with a banana PB2, ice, milk, oats and cinnamon.
I also like oatmeal (but not the quick packets or grits but mostly on winter mornings.)
I generally do either oatmeal with nuts and berries or a breakfast taco with refried beans and sweet potatoes. I make a bunch of the tacos on the weekends and then freeze so I can eat as needed.
My go-to is a smoothie (frozen fruit, frozen spinach or cauliflower, frozen avocado, some hemp, chia or flax seeds, collagen powder and either water, almond milk or coconut water) I put everything, minus the liquid in the nutrabullet the night before and keep it in the freezer. Then I take it out in the morning, add the liquid and let it sit on the counter to thaw out for 15-20 minutes. I've also made up freezer baggies with all the frozen fruit/veg portioned out, so I can just grab that and add the other stuff.
On the weekends I've been making avocado toast on sourdough and it's so satisfying. I like to top mine with a drizzle of honey, chili flakes and salt. Sometimes I'll do a poached or fried egg if I'm really hungry.
One of my favorite non-traditional things to eat in the morning is leftover rice w/ a fried egg on top. I heat it up in a pan, add veggies and kimchi or hot sauce too.
Frittata or egg cups (in a muffin tin) with whatever veggies, cheese, meat you like are easy to grab on the go and I don't mind eating cold/room temp. But I tend to get sick of eggs, so I can't eat them daily.
Overnight oats. I make mine with 1/2 c old fashion oats, frozen blueberries, pecans or walnuts, cinnamon, a squeeze of honey and unsweetened vanilla almond milk. Fills me up and throws together in 5 mins. I usually make before I leave for work and it is ready by the time I sit and eat a little over an hour later. I don't even do the night before.

I'm following along for ideas. I need something quick and easy for mornings, and my stipulation is that I'm not a fan of eggs. My morning protein bar is not getting me through my class right now.
For my commute in, I do a coffee smoothie. Cold coffee, frozen almond milk cubes, spinach, and protein powder either vanilla or salted caramel. Throw it all in a blender and then in a yeti.
On the weekends I will do them with pb2 and bananas, almond milk and protein powder. Sometimes other fruits. I can't eat first thing in the morning so smoothies work great for me.
Sweets in the morning make me nauseous and I work out in the early morning, so I tend to eat dinner leftovers for breakfast (this morning I had taco salad). Breakfast burritos are great, too, my problem is that when I make them ahead, we all tend to snack on them and they never actually make them through the week.
I drink a smoothie almost daily. To make 2 (for me and my H), I use a banana, 2 cups of milk, a couple of spoonfuls of peanut butter, and then add whatever frozen fruits I can buy cheaply - often mango and a berry mix from Aldi. I started doing this because I realized I was not eating hardly any fruit and often not enough veggies or healthy dairy, so I figure this knocks out some of my nutritional needs right away in the day.
I used to always make breakfast egg casseroles and warm them up - sliced potatoes at the bottom of a pan, then add veggies and/or a meat like sausage, then top with 10-12 scrambled eggs and cheese. Bake for about 35 minutes at 400. I would get 8 servings out of it and you could freeze extras if that's too much for you. I'd bring these to work and warm up in the microwave and eat at my desk.
I also occasionally will have an egg and cheese sandwich (with bread or an english muffin). Those are easy to throw together quickly and then eat in the car.

I sometimes do some breakfast-type muffin things. Get some diced ham (can buy pre-packaged), put a little in, add some diced green onion, a little cheese, and then pour eggs (again, I usually get the carton for this so I don't have to mess with actual eggs) to fill the tin. Add a little pepper and garlic, bake @ 350 for about 25 minutes or so until done, and refrigerate. Eat hot or cold. I'm sure you could eliminate the ham completely or sub with bacon or sausage, I just never have

Jalapeñomel, just a soft flour tortilla with peanut butter. Maybe wraps in general would be good for you for breakfast? Turkey, avocado, peanut butter, pb&j, whatever sandwich combo sounds good.
I just do microwave stuff usually like egg bites or breakfast sandwiches but I'm not someone who is bound by breakfast food in the morning and morning salads can be very refreshing. You can find special breakfast salad recipes online.
I also often eat dinner leftovers for breakfast, too.

I had to change up my breakfast routine. Overnight oats was causing my blood sugar to go way too high, so I switched to a crustless quiche. That seems to be working much better for me. Built protein bars are also a good option for me.
I eat a smoothie pretty much every day because it's easy and makes me feel good. Protein powder, non-dairy milk, blueberries, tiny bit of banana or avocado, and a big handful of spinach. I can sip it while getting kids ready, commuting etc.
I eat an english muffin with PB almost every morning.
I don't do much dairy anymore, and can't deal with the texture of a smoothie. I am also lazy about washing pots and pans so don't want to make eggs every day LOL.
When I was doing Whole 30, I would make some sort of egg-based breakfast casserole on Sunday and eat it all week. I should probably get into doing that again.
I do a breakfast taco every day - 2 scrambled eggs and a slice of cheese wrapped in a tortilla with a generous shake of hot sauce. It’s literally the only thing that gets me out of bed some days, I love it so.
