It seems like you really want a bold pattern. I see you're exploring different shapes of tile, but have you also looked at bold patterns with tone-on-tone color or something more monochromatic?
I saw a house listing in my area with a backsplash that made me think of this thread... it was something like this. Simple, clean, but a little different.

It's a mix of plain white subway, with the 3D piece to make the design. \
But when we got the samples in, it was actually really drab. The finish is matte and the colors were nowhere near as bright or varied as they looked online--and we had a dozen of the tiles because we wanted to see a good example of the variation.
So I think we're just going to stick with white, but with kind of a cool pattern. The more I look at it, the more I like it. Every other tile we've considered has been the opposite, lol.

I like this one! It's like a more modern version of arabesque tile which I also really like. I would try to match the grout to the tile as much as possible, though, so you don't have prominent grout lines competing with the curvy texture.
