I think I'd try to work it into the bathrooms/closets closer to the bedrooms, but if that isn't feasible then I don't think there's a problem moving them to that area of the kitchen. The previous owners of my parents' house did that so there's a laundry closet in the eat-in area of their kitchen (and my parents never use that space to eat because there's a dining room about four feet away).
Definitely don't think it's weird to eliminate the eat-in kitchen space in general. Ours has one that we turned into a small TV/sitting area since the dining room is right next to it.

So, for grins, I grabbed some photos. This is the kitchen, starting in the doorway from the main hall, then standing and facing the dining room. And finally, from the doorway to the dining room, back into the kitchen.

Can you move the dining room into the eat in kitchen part? Close the exterior door in the kitchen. Turn part of the current dining room into a mudroom/laundry room with an exterior door?
What do you use your second bedroom for? How big is it? Could you use the closet in there (or create a new closet) to hold a stackable unit? My in-laws put full-size stackable units in a closet that was previously a stairway, and it works well. You’ll still have the hookups in the basement if the next people need to use the bedroom as a full bedroom, but it might be really attractive to a single person looking. Someone might want to use it as their “dressing room.”
