Six Can Chili is super easy. 4 cans beans (I use 2 Kidney, 1 Black, and 1 White Bean), 2-28oz cans Diced Tomatoes, 1 packet Taco Seasoning.
Dump all ingredients in crockpot (don’t rinse beans), stir and cook on low for 8 hours or high for 4 hours.
This is a great base and then you can add other things. I’ll usually throw in a diced onion, or chopped sweet peppers, or garlic, or canned diced jalapeños, or corn or any combo, etc. whatever your heart desires

Ina Garten’s Winter Minestrone, just made it tonight! One of my favorites, you could just leave out the pancetta to make it vegetarian. The pesto and white wine really elevate it.

I love celery root soup. This is similar to how I make it. I use vegetable broth instead if water and I use black pepper. www.davidlebovitz.com/celery-root-soup/

Split pea. I use chipotle powder to sub for the smokiness of the ham hock. Smoked salt if you don't like the heat.
Another for white bean soup.
A few years back I made a vegan Irish "beef" stew using tempeh, and it was surprisingly good. Make sure to add guinness if it's not already in the recipe

Sorry, I don't have any handy links. Living in the tropics I haven't had occasion to make any of these for a few years.
I made this recently. It needed to simmer much longer than she says for the lentils to get soft and the flavors to develop. We ate it with crusty bread.
I make this regularly. I throw whatever veggies I have on hand or left over into it. the flavor changes quite a bit too if you use grilled zucchini and/or squash. the grilled flavor changes the entire soup. "if" you have access to a grill in winter. lol
I make a lot of vegetarian soups in the winter. Here are some of my favorites. I make them all on the stove, not the slow cooker. If it calls for greens, I use spinach. I sub vegetable broth when it calls for chicken broth.

jennybee1018, I have a turkey red lentil bulgur soup recipe that I LOVE in the winter! Such a comforting soup! (Whatever recipe used)! I love the idea of the chili with the bulgur!
