I am so sick of being the food planner (said every time I come in here).
Tonight is burgers. Tomorrow is a Mexican cauliflower rice with ground Turkey. Tuesday my in-laws will be here to go watch my youngest’s baseball practice so I am going to make sheet pan chicken fajitas. Wednesday - I’m wanting to do an enchilada quinoa casserole that I like that no one else likes 🤷♀️ Thursday - Always a busy night for us so probably clean the fridge of leftovers or something like nuggets for the kids and a freezer meal for H. Friday - frozen pizza
I also randomly found a recipe for a lemon chickpea salad that looks good so if I have time I will make that for my lunches.
Tonight - meatball subs or we might end up going out because I don't really want to cook lol Monday - shrimp alfredo Tuesday - leftovers or on your own Wednesday - pizza Thursday - garlic butter steak bites, mashed potatoes, broccoli Friday and Saturday - we are hopefully going home so we'll eat stuff there... not sure what all H has (if we don't go home, we'll probably have leftovers both days) Sunday - Superbowl so green chili and jalapeno poppers. I might make chicken nuggets for the kids if they don't want green chili
Sun: IKEA meatballs (frozen), mashed potatoes and zucchini Mon: salmon, rice and green beans Tue: chicken stir fry Wed: Damn Delicious green chicken enchiladas (my favorite new recipe, I use Trader Joe’s salsa verde) Thur: chicken tikka masala in the instant pot Fri: leftovers or takeout
My goal is to cook Mon/Thur and then we usually do takeout Friday because I’m spent by the end of the week.
Tonight- H got some marinated skirt steak so he's going to make fajitas with poblano peppers, onions and guacamole. Tomorrow- Thai Peanut Salad, adding shrimp seekinggoodeats.com/thai-peanut-salad-low-carb-keto/
Sat: Leftover Costco meatloaf + mashed potatoes, salad, fresh pears Sun: Pork schnitzel, cheesy spaetzle, homemade applesauce Mon: Monte Cristo sliders, more pears if they are still good Tue: Leftovers of the schnitzel, spaetzle, and applesauce Wed: Leftover sliders Thu: Thai-inspired chicken meatball soup, over rice (new NYTimes cooking recipe) 1/2(ish) batch, and made with turkey instead of chicken, because I never buy ground chicken
I also have the stuff to make broccoli gruyere soup and pretzel rolls, but I don't know when I'm going to make it. And next Sunday we'll for sure be eating Super Bowl snacks/junk.

I am trying to use the Gluten Free prep once eat all week someone suggested a while back because of my daughter's allergies. I'm only on my second week. This week's focus is ground beef and gold potatoes. We're having picadillo tacos, some type of shepherd's pie and bunless burgers with roasted broccoli and wedge fries. Filler meals will be a breakfast for dinner night and pizza since she loves the GF crust (shhh it's califlower but she doesn't know that).
I made a Shepherds Pie /Cottage Pie tonight. We’ll have it twice for dinner this week. But I deviated a bit from my mother’s recipe - I started with a mirepoix of onions/celery/carrot, then chopped and sautéed a pint of mushrooms, then sautéed Turkey & more onions instead of beef (or lamb). I mashed the potatoes with chicken broth - not milk/butter.
Tonight: pork roast my neighbor did on the Traeger and potato salad Monday: shrimp Caesar salad and garlic bread, also making chicken chili for a friend who’s husband had surgery last week Tuesday: either tuna melts or Korean beef over rice with broccoli Wednesday: DH’s birthday, I’m making a sausage gravy, egg and biscuit casserole (he loves sausage gravy and biscuits) Thursday: chicken quesadillas
Sunday: Harry tomato soup + grilled cheese (Seriously the BEST tomato soup you can buy in the store! Costco) Monday: See Sunday Tuesday: TBD Maybe a Jersey Mikes Sub Wednesday: Tofu burrito Thursday: Big salad Friday: probably out/order in or eat something at home to save $$ Sat.: probably something from the freezer/eat stuff that needs to be eaten night
DH is OOT for the next few weeks so the bar is relatively low here.
Sun: SK's garlic-ginger chicken noodle soup Mon: Costco salmon burgers, chili crisp fettuccine alfredo, broccoli or peas Tues: baked greek chicken I froze in marinade over the weekend, rice, broccoli Wed: Costco mediterranean beef skewers, naan, village salad, yogurt sauce Thurs: scrambled eggs, sausage patties, tator tots, fruit Fri: whatever the kids want Sat: slow cooker chicken tacos? My SIL and her family might be here so need to nail that plan down
Tonight we had: Chicken thighs over rice with gravy and peas Tomorrow: probably spaghetti Tuesday: tacos Wednesday: chicken sandwiches? Thursday: Pork tenderloin, stuffing, some vegetable Friday/Saturday - not sure. Would like to make soup and/or stuffed peppers but could order out Sunday: Super Bowl. All the snacks. Go Eagles!
Sunday: spicy sausage and pasta shells soup (from How Sweet Eats), garlic bread, salad Monday: is my birthday and I don't want to cook/clean, so probably some kind of takeout. We never do takeout during the week so it feels very special lol. Tuesday: salmon Caesar salads Wednesday: chicken sausage and peppers macaroni casserole (Skinnytaste) Thursday: fish taco bowls (Skinnytaste)
We've gotten into a good habit of including leftover days and having a few easy options on hand if there are no leftovers. Grilled cheese and soup, omelettes, etc.
We are desperate for a good grocery shop, but it will have to wait until the weekend.
I haven't decided the order but we are going to do the following with what we have
Leftover calzones (my husband bought 4 gigantic ones last night, and 2 was enough to feed the 4 of us, I refuse to waste, so we are repeating that meal) Chicken fried rice Spaghetti with meat sauce Chicken breast, rice and some kind of veggie Friday night pizza night.
