Monday I'm going to make butter chicken. I think we'll have it over cauliflower rice one night and spaghetti squash another night: cafedelites.com/butter-chicken/
We have kale and stir fry veggies to supplement.
For in between, we still have some leftovers from last week we need to finish (pulled pork bbq/carnitas).
What I really need to figure out is what I want to eat tonight... because I am NOT cooking, and there is no room in the fridge for leftover takeout. (If I'm going to spend 1+ hour scrubbing the kitchen, it needs to stay scrubbed for at least 24 hours.)

Tonight: corn chowder with ham Two nights: shepherds pie One night - daughter cooks: beef burritos, black beans, yellow rice One night: pasta and broccoli with olive oil and herbs, baked fish One night - son cooks: whatever he decides to cook with stuff that's already in the house since he didn't plan the menu for his cooking night.
Tonight is my sister's birthday dinner. Sun-I'll stop at Costco on the way home from DD's meet and pick up something quick and easy in the prepared section Mon-lemon chicken, baked potatoes, and green bean casserole Tue-stuff peppers in the crockpot Wed-chicken strips and tater tots Thurs-chicken soup in the crockpot maybe? Fri-?
I think I’ll do several premade meals this week, like Costco ravioli lasagne, a rotisserie chicken and Mac n cheese. We just have a ton going on and I’m not wanting to deal with it. Lol

We were in Cuba this past week and ate chicken basically every day so we are all (literally) chickened-out. I have therefore vowed to stay away from chicken for the rest of the week:
Sat: spaghetti w homemade sauce Sun: DH will pick up either lamb to grill or fish to pan fry Mon: perogies for us, fettuccine Alfredo for DS Tue: ham, cheesy potatoes, vegetable Wed: BFD - eggs, leftover ham, toast, hash browns Thu: thinking pizza Fri: TBD when I get groceries
Just the usual. I promise this will not inspire you.
Sunday: pasta w/Rao's marinara, homemade cheesy bread, some kind of veggie Monday: ditto Sunday aka leftovers Tuesday: TBD Maybe a Jersey Mikes Sub Wednesday: Tofu burrito Thursday: Big salad or pizza out Friday: probably out/order in or eat something at home to save $$ Sat.: probably something from the freezer/eat stuff that needs to be eaten night
Tonight: lentil soup (originally scheduled for what ended up being a 70 degree day last week, so not so much soup weather) Sunday: grilling burgers, salad, roasted potatoes Monday: ravioli, salad Tuesday: taco bowls Wednesday: beef stroganoff-ish noodles

Today: dinner out for me, frozen pizza for H Mon: roasted chicken, potatoes, veggies Tues: leftovers Wed-fri: take out for me (work travel), H is on his own Sat: ?? Maybe dinner out. Maybe salmon?
I’m home all next week so we’re going to have actual eat-at-home plans, lol.
S. Chicken pineapple bake, rice, asparagus M. Hash from leftover steak T. Jambalaya from the freezer W. Fend for yourself R. Chili from freezer F. Take out S. Whatever is on sale
Had to do some adapting/rearranging because we had (still have) a ton leftovers to use up, landed on:
Sat: took homemade mac n cheese, rotisserie chickens, steamed green beans, and green goddess salad kit for DD's confirmation class and ate with them, DH and DS ate leftover pizza/black beans and brats/german potato salad Sun: all leftovers- crispy chicken cutlets/rotisserie chicken, green beans, mac n cheese, penne marinara, braised red cabbage in various combinations Mon: teriyaki salmon rice bowls w/ quick pickled veggies Tues: big salads w/ leftover rotisserie chicken, mango, and avocado, maybe a Thai-ish chili-lime dressing and chopped peanuts? Wed: gnocchi w/ meatballs and peas (aaalllll from the freezer) Thurs: turkey burgers, fries, broccoli Fri: kids pick takeout or delivery
The leftovers of the green goddess salad plus feta and lemon-pickled red onions leftover from chili cook off are going to be lunches for me for a day or two as well. I want my fridge back!

We had chili and rice last night, and roasted chicken with potatoes and veggies Saturday. Tonight - unstuffed peppers. Tues - mac n cheese and hot dogs (my husband's specialty since I have a work event lol) Weds - smothered chicken and egg noodles Thurs - spicy steak ramen Fri - pizza bagels (no meat Friday for Lent)

We are in the process of moving this week, but DH is staying in our current house for 3 more weeks, so I am leaving enough stuff in the kitchen for him to use for that time. So basically I could cook normally if I wanted to, but I do not.
Sunday: Costco garlic pepper chicken drumsticks, roasted zucchini and baby potatoes - the last of the produce I needed to use up Monday: Stuffed salmon (pre-made from HEB), pine nut couscous, steamer bag veggies Tuesday: Stouffer's lasagna, garlic bread Wednesday/Thursday: Take out Friday: DS and I leave to move to the new house, eat on the road.
I am hoping to have my kitchen unpacked enough to start cooking again next week, but we will see.
Sun: grilled chicken salad w/ homemade ranch Mon: spaghetti, salad & garlic bread Tues: taco tuesday Wed: I have a girls night out, wine & dessert pairings (sooooo excited) Thurs: no idea, probably something from freezer Fri: fancy dinner out to celebrate our anniversary! pizza for the kids.
Sun: Asian short ribs in the instant pot, broccoli and rice. New recipe that came out decent! I plan to make it again but will probably try a different recipe (let me know if you have any recs!)
Mon: Haddock with cilantro, ginger and scallion sauce, green beans and rice. Tues: spaghetti with TJs frozen meatballs Wed: beef tacos Thur: black bean burgers and salad, chicken nuggets for kids Fri: leftovers or takeout
I’m so sick of my menus. I wish the kids would eat more variety, but kid #2 is so picky and I hate making 2 dinners more than once a week.
