What's on the menu for the week?
I'm broke, so....stuff from the cabinets and freezer supplemented by fresh veggies/big salad at lunch.
Sunday: veggie chickn cutlets, mac n cheese or rice, carrots Monday: veggie chickn cutlets, mac n cheese or rice, carrots Tuesday: tofu burrito Wednesday: maybe Subway/Jersey Mikes/something I have a coupon for Thursday: Soup+grilled cheese Friday: eat something at home to save $$ Sat.: Something out of the freezer
Tonight - hopefully h is bringing sushi home...if not, leftovers or on your own Monday - slow cooker carnitas and Spanish rice Tuesday - chicken pot pie Wednesday - Brats, mac n cheese, broccoli Thursday - pizza Friday - Sunday will be leftovers

I’m on a financial focus this week and only spent $100 on groceries for 4 for the week which was mostly for lunches and produce. I also cleaned out, organized and took inventory of my upstairs and downstairs freezer.
Ravioli and ground beef from the freezer, w meat sauce from the pantry Taco meat premade from the freezer and shells from the pantry Chicken frozen in marinade, veggies from the freezer and some sort of grain from the pantry Soup I had already made and froze

Saturday: grilled chicken tenders, veggie skewers Sunday: pizza (we’re in various places but we’re all having pizza!) Monday: meatball subs, salad Tuesday: chicken enchilada soup Wednesday: bacon broccoli mac and cheese

Sun - hot honey salmon, Greek salad, herb brown rice with coconut from a really excellent cookbook I have. Mon, Thurs - pork chops, arroz con gandules, green beans with tomato, chimichurri Tues - kebab, roti, curry garbanzos, Indian salad Wed - repeat Sun but sub steak for salmon
We’ve been in a real funk, eating out a *lot*…so this week, I decided to not even think about healthy and just focus on eating at home. We will add salads and fruits/veggies as sides.
Tonight we picked up taco plates from our favorite Mexican restaurant. We went on a long hike today and it was so hot, I needed carbs to refuel. It was great. Now me and H are sharing a bottle of wine while watching Survive the Raft.
Monday- Salad with blue cheese, bacon, pecans, honeycrisp apple and balsamic dijon vinaigrette (this is the most simple and delicious dressing ever- balsamic, dijon mustard, extra virgin olive oil, lemon juice, shallot.)
Thursday- Date night at a dinner party cooking class. H bought me these tickets for my birthday and I picked Spanish night so we're cooking paella. I'm super excited! Friday- No idea. Crazy weekend ahead!
Sunday - grilled cheese Monday - orange chicken with rice & from frozen broccoli Tuesday - burgers with homemade French fries and green salad Wednesday- fish tacos with tzatziki sauce Thursday - I’m going out for book club, family will eat leftovers or brinner Friday - probably pizza while doing set up for a fundraiser Saturday - H and I will eat at the fundraiser
Last night I made grain bowls with farro, spinach, roasted sweet potato, apples, goat cheese and pistachios with balsamic vinegarette.

Tonight: leftover crockpot beef and gravy over mashed taters Tomorrow: cheesy pasta with broccoli and chicken (bear creek mix, adding chicken) that hopefully will have some leftovers Tuesday: spaghetti with meat sauce, some veg Wednesday: orange chicken and rice Thursday: leftovers Friday: I just don’t fucking care. I can pm that recipe if anyone wants it!
I finally finished our meal plan! Friday is DS’s 9th birthday. My parents are coming in town Thursday, and we’ll have a family celebration on Saturday.
Sun: Grilled Chicken Wings, Roasted Potato Wedges, Cucumbers & Onions Mon: Spiced Chicken Breasts with Dates and Egg Noodles, Brussels Sprouts Tues: Chipotle Chicken Taquitos, Spanish Rice, Guacamole Wed: Sloppy Joes, Tater Tots, Corn Thurs: Black Bean Soup, Quesadillas Fri: Tacos, Refried Beans, Guacamole (aka White People Taco Night - the Birthday Boy’s request!) Sat: Smoked Whole Chicken, Mashed Potatoes and Gravy, Green Beans, Apple Salad, Texas Roadhouse Rolls

Tonight: How Sweet Eats pumpkin soup with grilled cheese croutons Mon: we have an Oktoberfest party for the mug club at a local brewery so whatever's there Tues: Skinnytaste chicken sausage and peppers macaroni casserole Wed: grilled chicken and stuffing - I wanted turkey cutlets but Walmart was out. I'll probably do some kind of apple cider marinade. Thurs: Emily Bites cheeseburger soup Friday: TBD

Rest of the week- Roasted feta and veggies over pasta Grilled shrimp Quesadillas on the blackstone Probably take out towards the end of week because parent conference week drains me and I come home exhausted
We didn't get takeout at all this past weekend. I want to celebrate, but I am also tired of cooking. And now I have another week to plan, prep, and clean up. *sigh*
Yesterday I made the best fish and chips I've ever made. Using rice flour is a game changer. The roasted broccoli was soggy, though. Can't win everything I guess.
The rest of the week looks like:
M: Rotisserie chicken with stir fry veggies. T: Pork chops, cauliflower mash, green beans. W: Giant chicken salads. T: Leftovers? F: Unless H comes up with another idea/request, takeout.
sadlebred can I ask what you do for a tofu burrito. I haven't been eating tofu long and am always looking for new ideas? I'm putting a tofu press on my Christmas list. haha. (DH and I don't swap large gifts and just do smaller things to open along with boys).
I injured my back pretty bad Saturday so it affected my plans. DH had to shop and cook after work.
Sunday: Turkey Bacon fried rice. Monday: Tuscan white bean and farro soup
that's all I know so far.
I have tofu in fridge and chicken, salmon, shrimp, burgers, ground turkey and swordfish in the freezer so something with that stuff
I have an eggplant, broccoli in fridge as well so we need to cook those.
I assume we will do some sort pasta and tacos and burgers since those are DHs go to stuff. lol.

Last night - beef and broccoli with rice Tonight - One pot BLT mac and cheese with salad Tuesday - one pan garlic butter chicken with corn and zucchini and potato wedges Wednesday - buffalo chicken and rice with broccoli Thursday - I am out with friends so DS and MH are on their own Friday - turkey cutlets with green beans and roasted potatoes Saturday - spaghetti squash lasagna boats with salad

I was lazy and didn't meal plan or shop this weekend. So I'm doing it now and going to run to the store on my way home from the office.
S: we had pizza and wings (that we didn't make on Friday since we decided to get Thai food takeout instead) M: coconut chicken curry with rice noodles (using a rotisserie chicken) T: tacos W: pork tenderloin, green beans, roasted potatoes Th: chicken sausages, sweet potato fries, salad F: crispy salmon bowls S: Chicken cutlets, pasta with vodka sauce, arugula salad
Sunday-goolash with homemade bread (I'm trying to use up tomatoes) Monday-cube steak, carrots, mashed potatoes Tuesday-leftovers Wednesday-bruchetta chicken and rice Thurs-chicken ravioli soup (DH finds the ravioli more filling than noodles) Fri-leftovers Saturday or Sunday the turkey that is still in my freezer from last winter
Tonight: salmon with herb butter (Costco), rice and side salad of cucumber, avocado tomato. Tomorrow: Chicken in lettuce cups, I think. I picked up something from Costco that I think will work for this and some butter lettuce) Wed: maybe "antipasto pasta" (I cook up an impromptu sauce of Italian chicken sausages with artichoke hearts, roasted red peppers, olives, capers, white wine, tapenade, pesto, tomatoes, whatever I have on hand that is like that. It's never the same twice). Thursday on: who knows.
