It’s similar to this but I’m using leftover spinach mashed potatoes and adding leeks in the fish layer. I will use only cod for the fish because it’s what I have in the freezer!

We were just in Paris and Brussels and enjoyed the food so much I’m trying to get back to more than throwing stuff on a plate. I do enjoy cooking but hate the mental part of it so I’m hoping planning a bit more helps that

I made this tonight - Stuffed Peppers. Delicious. Best part, it used up ingredients I already had and needed to use from the fridge including ground beef and cooked rice. I also added a large zucchini (chopped small and sautéed with the onion), a dozen grape tomatoes (chopped, seeds removed) and half a can of black beans (drained, rinsed). I also used all my bell peppers (4) and the stuffing was piled high.
