This week is a total mess full of games and practices all around dinnertime. I'm winging it a little.
Sun: leftover takeout from my weekend away Mon: Air fryer chicken cutlets made into caprese chicken over salad (DD2 soccer 345-5) Tues: Panera, I think, since it's on the way home from softball (DD1 therapy 430, DD2 soccer 430-530, right into therapy, DD1 softball 530-7) Wed: Chicken Tacos (DD2 soccer 6-715, I typically meet a friend to walk during practice) Thurs: Not sure yet (DD1 softball scrimmage 530-7) Fri: Probably pizza (DD1 softball game 330-530 but it's an hour away; DD2 soccer game 6-730) Sat: hoping to go out with DH (DD1 softball game 12-2; DD2 soccer 1:30-3 about 30 mins away, I'm hoping to make the 2nd half) Sun: Might have to be takeout - DD2 has a soccer game 12:30-1:45, her BFF has a birthday party at 2 30 mins away so I will stay, both kids are invited, I won't get home until close to 5).
The next 5 weeks are going to be like this. I just need to go with it.
Monday- parmesan crusted pork chops, baked sweet potato, green beans Tuesday- I have a board meeting, dh leftover hamburgers from the weekend Wednesday- chicken, rice and cheese with cauliflower rice and peppers and onions Thursday- our weekly pizza out Friday - out to dinner with friends from high school.
Mon- salmon and scalloped potatoes Tue-chicken tacos in the crockpot and rice (Tuesday everyone eats in shifts) Wed-spaghetti Thurs-? Fri-flauntas for DD and myself before she has practice so a lunch/dinner (DH will have to fend for himself)
Weekend: I'm leaning towards taking out a big beef roast since the weather is going back to rain.

M-Pork souvlaki and rice T-BBQ chicken and potatoes skillet W-Johnsonville cheddar and pork burgers TH-Chicken, either teriyaki or fajita seasoned TBD F-TBD. If I feel like cooking, something with chicken. Pizza if I don't.

How is the spaghetti squash? How long does it take to cook? I've tried zoodles and hearts of palm, but didn't like either. I'm trying to reduce carbs, but have almost accepted that spaghetti, the protien plus, is just one of those things without substitute that I'm eating.
rere, in my opinion the spaghetti squash takes way too long to cook and tastes worse than zoodles. I think I roasted ours for 40 minutes. Cauliflower noodles are okay if you eat a ton of sauces with them.

rere, 186momx, just FYI, you can do spaghetti squash in the microwave it's MUCH faster. Cut in half, scrape out the innards, pierce the skin like a baked potato.
I like it as a side dish, or zoodles with pesto (the only way I can eat them!) but it doesn't replace actual pasta and nothing ever will.
I'd rather have a smaller portion of REAL pasta and load up with veggies than try to substitute.
FFC- fake food makes me insane. Like just eat meat if you want meat. Thereโs a very popular vegan place near us, and all the food is fake food. Like โfake meatball subs with fake mozzarella cheese.โ I love vegan food thatโs just vegan food. Like Indian food or a lot of Asian food. But I hate fake food. Just give me vegetables with good sauce and rice or potatoes!

I was actually going to make these spaghetti squash "nest" things I got from Trader joes.....but in full disclosure I didn't end up making them. They were expired and when I pulled them out of the box, they looked gross and I was like meh. I do plan to try microwaving a spaghetti squash soon tho!
I really like spaghetti squash. It's not the same as pasta, but I do like it in place of pasta. I split it in half, sprinkle or spray with a little olive oil, salt, pepper, and garlic powder, and roast in a dish in the oven for about 45 mins. It's delicious to me! I don't like zucchini noodles at all - they're always wet and gross when I make them. I do use zucchini strips in place of noodles in lasagna a lot - I salt the strips and let them sit a while, blot them with a paper towel, and then grill them before layering them in a pan. It's labor-intensive, but the result is excellent.

Oof I have no idea what I'm doing this week... I have to come up with some ideas...
Last night DH grilled marinated sirloin tips, and I quickly made broccoli and a Knorr side dish. Tonight I'm thinking about grilled chicken over salad since it's a really nice day out. Tomorrow DD1 has a softball game through dinner (leave at 5, will get home around 8) so probably fend for ourselves. Or maybe tacos since I have ground chicken to use? Wednesday DD2 has soccer practice through dinner (leave at 545, home at 730). I typically take that time to walk with a friend or a good podcast... so maybe veggie burgers when I get home? Thursday we don't have anything, so I might make this: www.skinnytaste.com/chicken-florentine/ It's delicious, pretty easy, and I serve it over orzo that I cook in chicken broth. I always make enough for DH's lunch the next day. Friday: Dh is going to the beach house and I'll be home with the kids. So probably pizza or something?
Well my plan is in the trash right now as I went to make tonight dinner in the crockpot and were missing 3 ingredients, so switched to make tomorrow's dinner instead as I had all the meat out of the freezer and I'm missing ingredients there too. So I think I need to grocery shop after work since all my pantry basics are out of stock

Ugh this week is such a mess, and I got sucked into a closet cleanout project for DD1 over the weekend, which blew up my plans to cook and get ahead of things this week.
Sunday: DD2 and I were gone most of the afternoon at a birthday party. Dh ordered himself takeout - nothing for me, thanks pal - so I had a bagel and yogurt when I got home at 7pm. Monday: either grilled chicken or veggie burgers with tortellini caprese salad Tuesday: I'm going to try to put together a chicken broccoli rice casserole, but maybe freeze it in favor of something on the grill. It's actually feeling spring-y here so I want to use the grill before the temps drop again on Wednesday. Wed: DD2 has a game, so we'll be gone from 515-730. Probably takeout, maybe sandwiches? Thursday: DD1 has a game, we will be gone 445-close to 8. Everyone fend for themselves. Friday: Arts night at the kids school... so maybe takeout after? Saturday: hopefully out with DH
