My husband is out of work with a head injury (he is expected to recover, it is expected to take several months more).
Talk to me about easy dinners. Like, really easy. PB&J easy. Throw it in a crockpot and turn it on easy. Or maybe a little prep but one sheet pan so almost no cleanup easy.
Throw bagged frozen cubed hashbrowns, 1 small tub sour cream, 1 can cream of chicken, about 1 cup of any shredded cheese you want, some garlic powder/salt and cubed up ham all in a crockpot. Let cook on low about 6 hours, stirring every so often. It makes a nice little casserole that's hearty and makes a lot.
make your own grinders or make your own pizza/ buy precooked chicken tenders, chop them up and add them to cooked pasta of choice, jar of marinara and shred some mozzarella cheese on it. Jar of Indian simmer sauce poured over shredded rotisserie chicken and peas, instant rice.
I, too, hope your husband recovers with ease and wish you well over the upcoming months.
Tuna melts. Mix up tuna however you like it (I use mayo, lemon, anchovy paste dill, salt and pepper), slap it on a piece of bread, throw a piece of cheese on top and broil for five minutes. I serve it with chips and sliced cucumber. Comes together in less than 15 minutes - less if you mix the tuna ahead of time.

Sloppy Joes, air fryer fries, salad Cheater Chicken Parm -- bake breaded chicken patties, add tomato sauce and mozzarella/parmesan on top and broil for a minute to melt. Serve with pasta/salad Sam's Club orange chicken in the air fryer, instant rice, bagged steamed broccoli Pulled pork in the crockpot Hot ham and cheese sliders on Hawaiian rolls Easy cheesesteaks --use Boar's Head roast beef, fry it up in frying pan -add garlic, thyme whatever seasonings, melt provolone, serve on sub rolls
Sheet pan roasted smoked turkey sausage, potatoes, and broccoli. Halve or quarter baby potatoes and coat with olive oil and seasoning of choice and get those started in a ~400* oven while you slice a package of smoked turkey sausage and break up broccoli and oil/season those. Add to pan with potatoes and roast until everything is browned to your liking. I usually line the pan with non-stick foil so the only clean up is a cutting board and knife.

Chicken breast (it can still be frozen), jar of mild salsa, can of black beans in the crockpot. Shred the chicken when it's done cooking. Now you have taco filling or something you can eat over rice.
Birds Eye makes a huge bag of stir fry vegetables with sauce (it's called Oriental stir fry <-- I didn't name it!) I make that and noodles (usually spaghetti or linguini) and call it a day. We're having it tonight. i usually leave out some of the sauce to lower the sodium.
Egg roll in a bowl. Brown some ground meat. Add a bag of cole slaw mix (the kind without dressing), throw in some frozen ginger cubes, soy sauce, sesame oil, and a little brown sugar. Cook until the veggies are softened a bit. I often add a bag of shredded carrots and some snow peas with the cole slaw mix. Serve with rice.
Eggs (scrambled or fried for a sandwich) Quiche with frozen pie crust and bagged shredded cheese come together quickly, but takes a long time to cook.
Lovely chicken (thats our name I don't know what it's actually called) - Cut up raw chicken (breast, thighs, tenders, whatever you have). I use 2 breasts for 4, and have left overs Place in a 9x13 casserole dish (or smaller if making only 1 breast) Cut up 1 -2 sweet pot (or white) and line up next to chicken Add green beans (canned, fresh or frozen). I use a lot
Sprinkle packet of italian dressing seasoning packet place a cut up stick of butter all over the top Place foil on top, cook at 350 for 45 min - 1 hr
Dump meals Raw bone in chicken Potatoes Carrots Broccoli Onion Seasoning - whatever you like. You can use a packet of ranch dressing, packet of italian dressing, or just use salt/pepper, garlic, italian seasoning etc, BBQ sauce, honey mustard.
Cook on low for 8 hrs
Egg salad Eggs
Sheet pan dinners Kielbasa, peppers, potatoes - olive oil, seasoning. Cook 375 @25 minutes or until pot are tender
Chicken breast, veggies - broccoli, carrots, etc - olive oil, garlic, oregano. Cook 350 @30 min or until chicken is cooked
Sloppy Joe Crockpot - ground beef, can of sloppy joe. Cook for 3 - 4 hours on high or 6 hr on low. Serve on rolls or rice

Ground turkey browned - add whatever seasonings you like, we usually keep it simple with Salt & Pepper, and add a bag or two of Tasty Bite Madras lentils - we add peas to warm in the sauce and serve with Naan, but you can put over rice too. My kids love it.
Easy and delicious pot roast - Throw a chuck roast in the crock pot, take 1 (dry) packet of brown gravy, 1 (dry) packet of ranch seasoning, and 1 (dry) packet of italian seasoning and mix all 3 with one cup water - pour over the roast and cook on low for about 10 hours. You can Add Potatoes about 1/2 way through cooking and carrots with about 2 hours left to cook.
Sloppy Joes - brown ground meat, add a small can of tomato paste, a pinch of oregano, a few tablespoons of parmesan, and a squirt of ketchup or a bit of brown sugar. If it's too thick, add some tomato sauce. Serve on rolls and some cheese (tastes best if you broil the cheese on the rolls, but you don't have to).
Salsa chicken tacos (chicken breast and a jar of salsa in the crock pot; low for 6 hours) Grilled cheese and tomato soup Ham and cheese quiche (takes about 15 minutes to put together but then it bakes and is usually enough for more than one meal) Pasta with jarred sauce Chicken stir fry (you can buy diced chicken and cut veggies + jar of sauce)

Meatball hoagies - Frozen meatballs and a jar of pasta sauce in a pan for about 20 minutes. Put the meatboals on hoagie/sub rolls. Top with mozza/italian cheese and throw in oven for 2-5 minutes to finish off.
Chicken breast and any indian/thai sauce in the crockpot. Add frozen veggies if you want. Serve with rice.
Buy frozen pre-cut veggies. Pepper and onion mix, corn, peas, carrots, etc. it will make your life easier! Also TJs has great frozen rice.
I have been enjoying sheet pan fajitas - onions and peppers (fresh or frozen), cut up chicken, taco seasoning, bake at 400 for 20 mins. Put in tortillas, on salad, on rice, etc.
Sheet pan dinner - bagged frozen veggies and potatoes (like the Birdseye oven roasters) with sausage, drizzle on extra olive oil and season before cooking at 450, broil for the last couple mins.
Chicken pasta - cooked pasta (elbow, rotini, something forkable), shredded chicken, sour cream, cream cheese, salt/pepper/garlic powder/onion powder - mix it all up and put it into a casserole dish. Top with whatever cheese - I like cheddar or gouda. Bake at 350 until the cheese melts.
Steamed burgers - even frozen patties come out great, just cook them in a pan with a lid with a little water added
Crock pot chili - brown the ground beef and throw it into a crock pot with canned beans, diced tomatoes, chili powder/garlic powder/onion powder/s+p. You can add diced frozen onions if you want. Top with shredded cheddar.
Crock pot chicken salsa- Cook chicken breasts on low for 6 - 8 hrs with a jar of salsa. You can add a can of corn and black beans if you want. More salsa and chicken broth if you want it to be more like a soup.
(Brown sausage links, throw in crockpot with frozen pepper mix and jarred marinara. Eat by itself or on rolls.)
We do salsa chicken a lot, too. Can make into tacos or rice bowls.
Hit up Costco for easy pop into oven things. Don’t overlook Stouffers lasagna or Mac n cheese either. Sure it’s high sodium but sometimes it’s just about survival.

Salsa chicken - frozen chicken, container of salsa, can of black beans in the crock pot - cook, shred, mix in frozen corn and sour cream - cook a little more - serve as quesadillas, tacos, bowls, burritos, etc...
I like the easy sheet pan keilbasa - with small potatoes (or cut larger ones) and your veggie choice

Every week I buy a bag of buns (my family likes ciabatta, but sometimes I get regular hoagie buns too) and I either heat them up with whatever lunch meat everyone likes or frozen meatballs/jarred sauce/cheese.
Baked ziti (boil pasta and then throw in a pan with a jar of sauce and cheese of choice, and bake for like 30 min. at 375ish).
I bake chicken breast tenderloins on a sheet pan drizzled with olive oil and sprinkled with whatever seasoning you like (we use Monterey chicken seasoning), then boil pasta, make a bag of frozen broccoli, cut up the chicken, and toss all together with some butter.
