We're going camping this weekend with another couple and I'm responsible for all the meals on Sunday. I don't want to do the traditional hamburgers/hot dogs/brats/etc. as that's what we're doing on Friday night.
If it matters, I have a stove/oven and microwave in my camper, as well as a grill outside. Electricity obviously isn't an issue.
Two of the kids are vegetarians (middle schoolers...don't get me started on them), but the only accomodations I'm making are having non-meat sides.
Suggestions?? It doesn't have to be a "camping" meal necessarily, but something that can feed a crowd with minimal ingredients. Prep time isn't a huge issue to me.
We do what my daughter calls "hobo dinners". In tin foil, throw in sliced potatoes, carrots, onion, mushrooms (if you like them) and then a hamburger patty on top. A gob of butter, salt and pepper and cook over the grill.
We've also done "pudgie pies" (I have no clue if that's the real name). We have these fancy metal things you stick two pieces of bread in, fill with stuff (cheese, pizza sauce, sausage, etc) and then cook on the fire. We also use pie filling to have "dessert" in them.
ETA: you could use veggie burgers in the hobo dinner if the kids eat those?

:Y: My dad always had/has us make "hobos" when camping! We use hamburger meat, onions, potatoes, carrots, peppers, whatever we want plus something called "Spike" kind of like Mrs Dash but circa 1980 and wostechure sauce. They are awesome!!! Plus the veggie kids could just not add meat and get protien from trail mix or what not.
And sorry if my spelling sucks - new computer virus = no firefox = no auto spell check on internet.

You can do hobo packets with chicken, too. Or bacon-wrapped chicken, if you want to get really fancy. You could grill non-traditional stuff (chicken, lamb, pork chops, corn, zucchini, broccoli, etc.).
There's currently a post on F&E about camping recipes.
Given all the options that you have for cooking, you can do pretty much whatever you want, in terms of cooking. You could prep enchiladas or a Mexican lasagna ahead of time, and just bake in the oven in your camper when you get there...that way, you'd just have to bring the prepped dish, rather a bunch of ingredients.
