best adults-only AI on Pacific side of Mexico?

H and I are starting to look at planning out 5-year anniversary trip (we have about a year and a half left, but I figured get ideas early so I know how much to save)...we will probably take ~5 days and will fly from SFO.

I've been to several AI chains in Mexico and the Caribbean (Sandals, Beaches, Breezes, Paradisius, Palace Resorts), so I'm not a newbie-- I am just looking for somewhere nice, adults-only, and on the Pacific side of Mexico (we don't want to waste too much time traveling)...

Any recs? I know budget is always a consideration, but for now, just tell me where you'd recommend (if you can say how much it cost, even better!).
