Jersey or interlock would be your best bet. Skip that slub rayon knit though. I love it. It's beautiful but it's too thin and drapey for what you're trying to do.

I use tshirts from the thrift store or Walmart to make colored leggings for LA. It is super cheap and you can get them in any color (plus, if you plan correctly, no bottom hem!)
Leggings are best with cotton that has a little spandex (lycra/whatever) in it- but, they can be made with any old knit (just don't use something crazy and scratchy or super thin). Girlcharlie has some nice cotton jerseys with spandex in them that would be great. Knees get pretty droopy without that elastic in the fabric (but, if that doesn't bother you, by all means do whatever). Polyester fabrics don't breathe well enough for areas that really need that, IMO- so I'd skip them, but, a cotton poly blend might be okay.
