S: had a big/late lunch at my parents, so we just snacked for dinner M: Chicken cutlets with rigatoni in vodka sauce (this was supposed to be Mother's Day dinner) T: Steak fajitas, rice W: Greek chicken salads Th: leaving after work to go to our cottage to open it for the season. We'll probably just eat some leftovers before we get on the road F & S: We'll grab something for the grill one night and go out the other. The town where our cottage is located is a very seasonal town so a lot of restaurants aren't open until Memorial Day weekend... so we'll see what is even open.
Sun: kids planned and cooked creamy turmeric pasta, roasted broccoli, and we ended up with leftover hot chicken tenders from lunch instead of baked chicken, and they baked a lemon loaf cake Mon: salmon and rice bowls w/ cucumbers and avocado Tues: premarinated chimichurri steak, lemony potatoes, green beans Wed: turkey burgers, apple slices Thurs: pasta w/ pepperoni and peas Fri: out Sat: taking antipasto skewers and buffalo pretzels to a party
Sunday: homemade pizza Monday: shepherds pie because I have leftover mashed potatoes I need to use Tuesday: taco bowls Wednesday/Thursday: leftovers, takeout Friday: Costco lasagna I forgot was in the freezer
Sun: Crock Pot Beef Barbacoa Bowls Mon: Shake n Bake Pork Chops, Au Gratin Potatoes, Green Beans Tues: Taco Night w/leftover Barbacoa Wed: Take n Bake pizza Thurs: Chicken Tortellini Soup, Take n Bake Bread Fri: Baked Potato Bar Sat: Salmon Patties, Mac & Cheese, Green Beans
Sunday: Mothers Day - my dad grilled burgers and sausages Monday: Emily Bites taco bake Tuesday: buffalo chicken stuffed sweet potatoes. We have a baseball game, so I can have the chicken ready in the crockpot and just microwave the potatoes when we get home. Wednesday: Skinnytaste chicken stroganoff Thursday: Skinnytaste chicken Gnocchi soup Friday: tbd
My mom and mil are coming today to help me spring clean so my mom is making some of the meals for this week.
Last night - H made green chili for me for Mother's Day Tonight - Mom is making tuna noodle casserole Tuesday - I'm picking up freshly butchered chickens from the Ag class so roasted chicken and mashed potatoes Wednesday - Steak, mac n cheese, broccoli Thursday - Chicken enchiladas Friday - homemade pizzas Saturday and Sunday will be leftovers

I just made a salad my friend recommended from tik tok with roasted shaved brussel sprouts and beans. It’s huge and if it was up to me I would just eat that all week. My kids and h will need other meals though haha.
I want to ask the cooks among you a question. Do you have techniques for cutting herbs very small? A special knife you like? I can never get them small enough. My salad has a ton of fresh herbs and still tastes really good, but the pieces of dill and parsley are too big and it makes it taste a little weedy.

Last night we didn't eat dinner because we were so full from brunch (Brazilian steakhouse, so you can imagine, lol. ) We had popcorn while we watched My Cousin Vinny.
Tonight- me and David have an awkwardly timed YMSL meeting tonight. He gets pizza there and I guess I'll bring snacks. Tuesday- Wraps and protein chips Wednesday- Kevin's cilantro lime chicken over skinny noodles Thursday- sushi date night Friday- probably pick up F&F grill

Sunday: We grilled hot dogs with homemade pasta salad, corn on the cob, and fruit Monday: Chicken Parmesan, baked potato, green beans Tuesday: I’m doing a “paint your pet” night at a pub with co-workers so I’ll eat there and H will figure something out Wed: Probably chicken parm leftovers
Sunday: Popcorn and chocolate (yes, really! I had a late late lunch.) Monday: Breakfast for dinner. Eggs, toast, grits since the eggs and bread need to be used up. Tuesday: Soup+grilled cheese Wed.: Willys tofu burrito IYKYK Thursday: Possibly out for pizza w/a friend Friday/Sat.: TBD

Does anyone have a good rib recipe that doesn't involve the smoker? DD and I get sick every single time DH smokes ribs and we have a ton to use up in the freezer. I think we just are super sensitive to smoked meats.

If it’s a salad, can you put the herbs & dressing ingredients into a mini food processor or blender? Or do you still want some herb texture?
Typically I just use a chef’s knife for mincing herbs if I need to do it. You just keep piling them up & going over them like cross hatch ways many times

Have you ever seen a mezzaluna? It's a curved blade which is ideal for cutting herbs - BUT not necessary. I mention it because that's the kind of motion you want with your knife, that back and forth rocking.

We don't have a smoker, so I just bake the ribs in the oven at a low temp for a couple hours before throwing them on the grill.

In week 7000 of eating-through-the-pantry-and-freezer-because-we’re-moving, I present the following meal collaborations- M- Enchiladas (cheese, meat, tortillas from the freezer, last of an onion, pantry staples for sauce), the last box of Mexican rice, a container of frozen pinto beans T- Butter Chicken kit from Sam’s Club (I had this frozen), rice, frozen naan, canned green beans W- crockpot chicken and rice- frozen chicken breast and frozen mixed veggies, two assorted Knorr rice mixes from the pantry, canned cream of chicken and chicken broth Th- sixsistersstuff.com Korean beef- frozen ground beef, rice (yes, we had a lot in the pantry), green onions from last year’s garden that refuse to die, frozen corn on the cob Friday & Saturday- eat out Sunday- The last day I cook before we move- Beef stew made with, you guessed it, frozen stew meat. I did buy potatoes and an onion but I had everything else. Served with sourdough bread from the freezer.
