Alright, so an SO friend comes to town and you want to show them your favorite non-chain place to eat. Where do you go?
I'd take them to the Public House. It's a bar/tavern place that may not be a great date atmosphere, but fun drinks and food. We chat with the managers every time we go in. Do any of you watch the show Bar Rescue? They were on the latest season. They used to be called the Black Sheep.
Depends on what they want, Benvenuti's for Italian; The Garage for greasy burgers and skittles vodka; La Baguette for Brunch/desserts; Tarahumara's for Mexican food.

Ok, if we're in the city I live in now, probably The Fours. It's a sport bar/pub but the food is always solid and the buffalo chicken nachos are to die for. They have 2 other locations in the state so I guess they qualify as non-chain.
In the city there are a ton of restaurants/bars to choose from on the Waterfront or the N. End.

God there are just too many places in PDX. Some of my favs are Davis Street Tavern, North 45, 23 Hoyt, Gravy, Ringside, Paragon, Bar Avignon. I could seriously go on for days.
Depending on what they want: The Union, The Woodshop, Slow's, Roast, Sumo sushi, Bad Brads BBQ, Small Plates, Texas de Brazil. So many super awesome restaurants to choose from here.
Dorodo for Mexican, TRATA for drinks or american, Sticky Lips for BBQ, Gatehouse for burgers.
And after I get you wasted, Nick Tahou's for Garbage Plates. Fuck yeah.

The BBQ Exchange for some awesome barbecue. Rhett's is where I go every Wednesday night, and it's got a solid menu of good seafood. Mas for some AWESOME tapas. Bang! or Blue Light Grill for martinis and mixed drinks.

It's AMAZING. And huge! I usually get it without the cole slaw, because I'm not a big fan, but everyone else seems to like it!
ETA: It goes great with a :beer: ! Or hard cider.
Two of biggest perks of living in the south are great BBQ everywhere you turn and biscuits and gravy!
Luna Maya for South American, Pasha Mezze for Meditteranean, Still for tapas, No Frill Grill for American, Brutti's for brunch. The "local" scene here isn't very robust, but it's starting to pick up.
I'd have a field day with this post if I still lived in Charleston. I could take you on a culinary tour.
ETA: Also, Fire and Vine for steaks/wine flights. I haven't been there in forever. Maybe we'll take my parents there this weekend.
ETAA: Oh, and Bier Garden! How could I forget! Great German food and the longest beer list I've ever seen.
