I'm making a "superfood salad". At least, that's what they called it on pinterest. It's just wilted kale, sweet potato, edamame, and some other junk. Avocado I think.
sliced deli turkey and something else for the girls. Don't know what, but I know they won't eat the chili. Probably leftover mac and cheese or something. And a veggie of some sort.
Spaghetti and meat sauce. Side is baked acorn squash with cream, thyme, and parmesan. Dh and I are pretty sure we hate squash but wanted to give it another shot.

I had a leftover chunk of gruyere that needed to be used so I made fondue. Which I dipped from directly out of the pan, standing over the stove. Tasty AND klassy.
I wanted to make spaghetti with meat sauce, but H's appetite is still low from the bad cold he had this week, so I just had a bowl of Multigrain Cheerios. Good thing too, since I've hardly eaten anything today and was getting dizzy.

cut your squash in half, lengthwise (pre-baking for a few minutes in the microwave makes it easier to cut). Clean out the seeds. Spread butter in the cavity, fill with sausage. Bake at 350 until sausage is done - if you pre-bake the squash then bake it for about 30 minutes, it not pre-baked probably 45 minutes or so.
We like it a lot and people I've served it to do also.
Try this - recipe, it's really good. Pork Tenderloin with Acorn Squash
Ingredients: 2 lbs Acorn Squash, quartered, seeded, sliced ½” thick, skin on 8 cloves Garlic, peeled, cut in half ½ tsp Dried rosemary Salt Coarse Pepper Freshly ground 2 lbs 2 pork tenderloins, 1 lb each 4 tsp Olive oil 2 tbsp Hoisin sauce PREHEAT OVEN TO °375, bake 25 minutes. Baste with Hoisin sauce, bake another 15 minutes until pork reaches internal 160°. Directions: 1. Preheat oven, spray large oven roasting pan, minimum 13x9. 2. Cut squash, remove seeds, slice ½” thick. Leave skin on. 3. Scatter squash and garlic in roasting pan, pan will be fairly full. 4. Mix rosemary, 1 ½ tsp coarse salt, ¼ tsp freshly ground pepper and rub in to pork. 5. Place pork in pan on top of vegetables 6. Drizzle with olive oil 7. Roast 25 minutes. Brush with hoisin sauce (may need slightly more than 2 tbsp) 8. Continue roasting about 15 minutes until pork reaches an internal temperature of 160 minutes. 9. Remove meat from oven let rest 5 minutes before slicing in to medallions. 10. Place on serving tray with garlic and any pan juices.

I recreated the Chipotle chicken burrito bowls, so the seasoned chicken, cilantro lime rice, seasoned black beans, shredded lettuce. It was delicious, but I have a million dishes to do now.
