At my parents' house, it's cinnamon rolls first thing in the morning and eggies for brunch and then my mom makes the same dinner every Christmas, complete with cheesecake. We haven't really made our own traditions yet, althought I do do the cinammon rolls.
I think that mimosas sound like a grand idea and I will be encouraging them as well.
We have my mom's homemade lasagna on Christmas Eve. On Christmas my dad would bake those Pillsbury orange-flavor rolls since I hate cinnamon. My mom would also have some homemade strawberry bread around.
Basically, lots of sweets. And cream-of-crap casseroles.
My mother-in-law makes her AMAZING cinnamon buns the night before (but not baked) and brings us over the buns, the topping and instructions on how to bake them. We used to go to their house early in the morning for them... but it was important to her that we had Christmas morning by ourselves. So we start out Christmas morning with coffee and the best cinnamon buns in the world.
Then my favorite Christmas/Thanksgiving food is celery stuffed with cream cheese with green olives on the top.
Growing up we didn't have any real traditions aside from a turkey/ham. DH's mom makes a lasagna and ham for xmas day and his sister makes some type of awesome dinner on xmas eve. There is always LOTS of cookies, all different kinds. We always have our own xmas dinner at home before we travel though - which is tonight! It includes steak and wine and presents!

We're another cinnamon roll family. My mom's recipe makes enough dough for two 9"" x 13" pans, so she'd always do one caramel pecan rolls, and one basic cinnamon.
I always use the same recipe since it just wouldn't be the same without them, and I take one of the pans over to my neighbor once they're baked. But I'm the only caramel pecan eater in the house, so I usually just go with the basic cinnamon rolls.
Santa also brings each person in the house an orange and an apple in their stocking. (The Biggest ones he can find)
