Cooked some shells stuffed with cottage cheese, mozzarella and spices- no meat. Was taken out of the oven around 6pm and found on the counter at 8am. My gut says no because of the dairy...

I would. But my logic is based on the fact that my house is colder overnight (usually cools off at night during the summer here, no central heating in winter) - I wouldn't eat it if you'd left it out from 6am to 8pm in the summer. For me it's a temperature thing, so the real question is how warm/cold was your house last night?

I have left lasagne out overnight before and eaten it the next day, so I would also eat this (except that I don't like stuffed shells, so I actually would not). I left a tub of cream cheese in my lunch bag overnight last night and just returned it to my fridge this morning when I discovered. I also know all about food safety, but I also choose to ignore it.
Totally ate some beef at a friend's house that had been sitting out for a questionable period of time. I don't know if it was over 2 hours or not. It wasn't over 3.
I would have eaten it - but cottage cheese sounds really gross in stuffed shells. But it's just sauce pasta and cheese so I have no problem with that sitting out overnight.
