oh we love fondue! Here's our favorite, it's like the cheddar fondue at Melting Pot:
3 to 3 1/2 oz beer (we usually use Blue Moon or Boulevard Wheat, Miller High Life is what they use at MP) 1/4 teaspoon mustard powder 1/2 teaspoon chopped garlic 1-2 Tablespoons worcestshire sauce, however much you prefer, it can be strong. 2 cups extra sharp cheddar cheese 1 cup swiss cheese
Grate cheese and mix in some flour to very lightly coat the cheese and keep it from clumping. (never use pre-shredded cheese)
Mix beer, mustard powder and garlic in the fondue pot, bring to a simmer. Add in cheese in small batches, and stir until the consistency is right. Add in worcestshire sauce and continue stirring until thickened.
Toss flour with shredded cheese (this prevents clumping). Rub fondue pot with a garlic clove, then pour in wine and heat until bubbles rise, add cheese mixture a handful at a time, stirring constantly. Once cheese is fully melted, stir in cinnamon and pepper. Enjoy! We eat ours with bread and granny smith apples!

I love doing meats, too. You can use either oil or broth, and cut up chunks of fresh chicken, beef tenderloin, mushrooms, and veggies. Soooo good! I haven't done this in years; now I want to bust out my fondue pot!
Tip #3: If you prefer to make the fondue without alcohol, you will need to add a non-alcoholic acid, like lemon juice. Proportions will vary depending on the recipe you’re using. I found that substituting milk for the wine and adding 2-3 tbsp of lemon juice seemed to work in converting recipes from alcoholic to non-alcoholic. You’ll need to experiment and see what works best for you.
Yeah it probably is fine but I am in the camp of no alcohol at all personally. Long story, but we thought we miscarried at 8 weeks and found out at 14 that we were still pregnant and in that time I thought I wasn't pregnant, I had a handful of drinks. The guilt has been awful so I am super cautious now to "make up" for being so stupid.
