Okay this doesn't totally apply to us but sort of so I'm answering anyways.
E has class 3 nights a week starting at 6 pm. I don't get off until 5pm. He's gone before I get here. So whatever is the first night in the week that he has class I do something in the crock pot so its warm and ready to go when he gets off work. This normally last until the next day as well.
The other nights where he doesn't have class I make meals that provide leftovers and he eats those before class. It seems to be working for now.

This doesn't completely apply to me, but J works opposites every few weeks. I fix meals for us like usual. When I put dinner away, I fix a plate for him and put it in the fridge. I also keep muffins, power cookies, and several other options for him around. He will either heat up dinner or grab something else when he gets home. He also takes left overs and snacks with him when he leaves for work again.
We work opposites. I get home at 6pm. He is already gone for work and does not get home until usually 3-5am. Sometimes earlier, but almost never before midnight. Usually I fix meals and then leave him leftovers in the fridge. He usually will heat it up when he gets home or grab something else. I will tell him if I am not cooking that night or making something he hates (mac and cheese usually)
I also keep lunch meat in the fridge for him to eat before work or after. He sometimes will take a sandwich to work and sometimes not. If he does not eat leftovers the night he gets home, he will eat them the next day or take them to work.
If I'm feeling generous, and he's not crazy busy at work, I might bring him dinner that night.
We do this every few months. I make breakfast and lunches for everyone (H's goes in the fridge in the morning, and he takes them to work overnight) and he makes dinner before we get home in the evening. We try to eat together, and he leaves immediately after the meal.

This is what we do. I also have frozen meals (pizzas, chicken, taquitos, etc) on hand for snacks if he wants something else.
I'm usually the one who ends up missing dinner. I'm also the one who usually cooks dinner, so the nights that I know I won't be home I'll make sure that there are leftovers that H can reheat on his own (and that I can reheat when I get home). We almost always have something in the fridge that can be reheated quickly.

A and I work opposite (civilian) shifts....When I'm not on maternity leave, I leave for work a little before 6a and get home sometime between 6p-midnight. A works 3p-3a (or sometimes travels last minute).
We each take care of our own breakfast and lunch (and I do the kids). If I make it home from work in time to cook dinner and he isn't traveling for the night, he will come home for 30 minutes to eat dinner and see the kids, then go back. When he was AD USMC and on nights, he would take the dinner I made the night before for lunch.

We used to work opposite shifts and usually just ate separate meals. Sometimes I would cook extra and leave it in the fridge for DH. I worked first and he worked second.

We work the same shift but there are a few nights where I work at my second job. I make things in the crock pot that day so it's ready when he(or we) get home. I can either grab and go or he has food if I have to go straight to job 2.

I make dinner like normal or reheat leftovers and I make him a plate. On his days off he cooks and we eat together. On the weekends (he works days) I cook (I like to try out new recipes) and we eat together.
Sometimes one of us will get up early and make breakfast, but usually I grab something to take to work and he eats with the kid. We eat lunch together everyday.
