I pre-brown and season beef then freeze it in flattened meal-sized portions so I can pull it out and defrost quick for spaghetti sauce, tacos, hamburger helper type things.
A "fancy" but ridiculously quick favorite of ours is seared scallops with thing slices of tomato, mozzarella, and a leaf fresh basil stacked on a piece of toasted baguette. The scallops take 2 minutes per side to cook. Put a tiny bit of olive oil in the pan, put in scallops, sprinkle with salt and a tiny bit of crushed red pepper if you want. Turn. Finished when the insides are just opaque. Set on top of the other ingredients on the toast, sprinkle with a dash of balsamic and serve.
This is absolutely DELICIOUS! I'm not a fan of chicken in general and the idea of chicken chili never really impressed me, but this stuff ROCKS. I use three cans of beans and about 2.5lbs of boneless/skinless thighs. My sis makes it for her family about 2-3x per month. I had it for the first time right before thanksgiving and have made it twice since then. LOVE it.
Pork lion roast in the crockpot - season and brown it the night before, then place in crock on a bed of carrots, potatoes and onions. Top with half bottle of Ken's vidalia oinion dressing. Cook on low for 8ish hours.
I prep the whole thing the night before and just pull it out of the fridge in the morning. So easy.
Chicken pot pie is easy too if you take some short cuts. Use a rotisserie chicken, frozen mixed veggies, potatoes cubed up small, cream of mushroom or chicken soup (I use the 99% fat free). Mix it all up and season ( I used a garlic herb spice blend). Throw in a pie crust and bake at 350 for 45 mins or so. Or you could do individual pies in ramekins.
We make the following with precooked shredded chicken (either chicken we cooked previously and froze or pulled off a rotisserie chicken from the grocery): chicken quesadillas, chicken tacos, enchiladas, tortilla soup (crockpot), Greek salad with chicken, Asian chicken salad, chicken fried rice, chicken Caesar pitas. Since the chicken in already cooked any of those meals can be ready in a few minutes.
Crab cakes, grilled pork chops, homemade pizza or calzones made with frozen or refrigerated dough, and various pasta dishes also frequently appear in our weeknight rotation since they require minimal prep and cooking time.
