Krafts enchilada bake thing freezes really well and you don't have to make it spicy. I leave out the Italian dressing in the recipe though.

I've also frozen some brown bag burritos without issue.

Non cream based soups freeze really well. Pizza and calzones also freeze well. Mexican casseroles with refried beans freeze well because the they don't put off any water.

Then I just make rice or noodles or quinoa and a frozen veggie. I don't really like crock pot meals with veggies because they all taste the same. I prefer frozen veggies for a fast dinner or those fresh precut bagged veggies that you throw in the microwave.

Italian beef freezes well. I use this recipe: allrecipes.com/recipe/slow-cooker-italian-beef-for-sandwiches/ and it is awesome! I throw in a sliced up green pepper, too.

I just blogged about 3 I did, but no idea if they actually freeze well. I just did them because I like them. Indonesian beef, chicken fennel & white bean soup, and Thai chicken.
