I never had more than two for either of my girls, and that was plenty. I didn't use the contoured pad all that much...I actually found it easier to change them using a flat waterproof pad on the floor.
Two was fine for me. That way if there was an emergency I had another one available. I also used the washable boppy changing pad liners on top of the cover for messy diapers, that way if there was an accident the liner caught the mess.
I have 2 changing pad covers per kid (so 4 total). I think 2 is fine. On rare times when both are dirty I've wrapped the pad in a towel until they get clean.

I have 4 of them. 3 came with the hand me down changing table and the last one I registered for and matches my crib sheets. I think 2 is a good amount. When one gets dirty you can immediately replace it with a clean one. We use small changing pads under the diaper part, but often times she spits up milk when getting her diaper changed.
I just have 2 and have never wished for more. We don't use the change pad that much any more. I wash it when it gets dirty; I do use a prefold in the "critical area" and wash that more frequently.
That's what we did, too, although I did just order some of those Boppy liners posted above for this next kiddo.
