We had a destination wedding in San Juan so I checked out a lot of the hotels at the time.
Our wedding was at Hotel El Convento in Old San Juan. Love, love, love this hotel, but it isn't on the beach so probably not what you want.
We chose the Marriott in Condado for the other events and for the room block for our guests. After looking at several hotels, we thought it was a good value. We also liked that there was a lot to walk to right outside the hotel.
we just came back from our 3rd trip to SJ yesterday. This time, we stayed at the La Concha Renaissance in Condado. It was a great hotel, very modern and nice. The beach was on the smaller side.
We've also stayed at the Ritz on Isla Verde (much preferred this beach) and the Marriott Stellaris which is right down the street from La Concha. It is a great destination with great food. Enjoy!
Restaurant suggestions: Marmalade for dinner - AMAZING and one of the best meals of my life. Cafe St. Germain is amazing too, but I only had lunch there.
I am partial to the Isla Verde area. The beach is beautiful! There is the El San Juan hotel, the Intercontinental and The Water Club on the beach. If you dont mind walking a block or two to the beach, there is Embassy Suites right there too.
Another vote for Isla Verde. We stayed at the Intercontinental, which was great for the price. However, we spent a lot of time at the El San Juan next door. It had great night life, more restaurants, and an awesome pool area. I would also rec the Bacardi tour. It was a fun way to spend an hour or two and get some free drinks!
Ditto Caribe Hilton! My family would also stay in Condado Plaza a lot when we would go to visit. We usually spent a few nights at Caribe Hilton, a few nights at my grandparents' place, and a few nights at Condado Plaza.
Is it just you and your SO/H going? Or do you have kids? Another option would be to rent out a villa or condo, which can often be cheaper than hotel. We've successfully done that a few times as well.
When in San Juan, you must go find El Jibarito and EAT!

I was all set to recommend la bombonera for the awesome mallorcas, but when I went to find a link, they've closed. So sad. They were an institution. Apparently cafe mallorca is a good substitute, though.
We also ate at Pikayo (the chef was on the first top chef master's, although I didn't realize that it was his restaurant until I saw him talking with some diners). Delicious. A great place for H to have his first taste of mofongo. But pricey.
