Hot damn! Do you typically make smaller serving meals or do you cook for your mom and siblings too? We meal plan too but I feel like we eat leftovers more than we cook. Lots of yummy in that list!
Our week/already half way through included black bean/sweet potato enchiladas, taco dinner, chili, and meatballs w/spaghetti squash. Kind of a haphazard heavy on the beans week.
Looks delicious! I'm trying to get back into cooking. I do enjoy it but haven't had time since Luke was born.
We had taco "cupcakes" (Emily Bites website), we were going to have a roasted chicken and potatoes tonight, I'll make chicken noodle soup with the extra chicken, lasagna "cupcakes" (Emily bites website)
I meal plan 4 weeks at a time normally. i only plan meals for Monday through Friday and we have a leftover day once a week. Week 1 is: Roasted cauliflower and white cheddar soup with bread omelets and toast pot stickers home made macaroni and cheese, salad
Week 2 is: beef stir fry with brown rice Crock pot roasted chicken and oven roasted ranch potatoes perogies and salad Porcupines (meatballs with rice in them) with cream of mushroom gravy, mashed potatoes and green beans
week 3 is: Tortellini with garlic mushroom cream sauce and a salad and french bread Chicken parm with spaghetti and salad and probably garlic bread Chicken with noodles and mixed veggies and biscuits chicken fajitas and rice and beans
week 4 is: Spaghetti limone parmeggiano, salad and garlic bread chicken alfredo manicotti, salad perogies southwestern skillet
wow that is very impressive! I reallllly need to start meal planning.
Last night I made panfried wild salmon filet, roasted sweet potato fries and greenbeans. Tonight we will be having stew beef I have it in the crockpot with onion and carrot. No time to cut potatoes this morning so I'll make roasted potato on the side.
I need to start planning better, and doing a whole week at a time. Maybe today.

Wow, I'm impressed with those of you who can plan more than one week at a time! I usually meal plan on Saturdays and shop Sundays. This what I've got for the rest of the week: Today- BBQ crockpot chicken, homemade biscuits, and steamed vegetables Friday- Feta and Zucchini Fritters, orzo, Greek salad Saturday- baked turkey chimichangas, salsa, brown rice
