half the meals are frozen crockpot meals already prepared and the others I have 90% of the ingredients in my freezer/pantry already. I just need to pick up a few fresh produce items and we're good to go. Lunches are going to be leftovers and caesar egg salad.
Sunday: Tilapia, sauteed sugar snap peas, raspberries, and a baked potato Monday: Pork chops with onion marmellata and broiled parmesan zucchini and potatoes Tuesday: Three bean chili with jalapeno cheddar corn bread Wednesday: Winnie out to dinner, H leftovers Thursday: Grilled pork chops with thyme, roasted carrots and potatoes Friday: Penne with shrimp and herbed cream sauce, side salad
As you may be able to tell, we have a lot of potatoes that I'm trying to use up. I'm also trying to get us to eat a bit more healthy than we were for a few weeks there.
S-M: chicken breasts stuffed with moz cheese and spinach. Lightly breaded, served with marinara and a spinach side salad. (This is a new experiment we thought of after loving skinny taste spinach/feta stuffed chicken). T-W: teriyaki pork chops, spinach salad, 1/2 sweet potato R: veg/beans burrito bowl. Got TJ's salsa for this. Yum! F: TJ's orange chicken, brown rice or quinoa, broc S: out
ETA: tonight we are making homemade pizza. I want to experiment with the olives, feta, and artichoke hearts I have.
Not too sure for the week yet. I usually sit down and do my menu on Sundays. But, we had this stir-fry tonight and it was amazing!
- Jasmine rice (made in chicken broth for added flavor) - Par-broiled broccoli - Sliced and quartered beets, roasted with a little butter and garlic - Sliced radishes - Sliced red peppers - Diced green onions - Julienned carrots - Chicken, seasoned with chili powder, cumin, cracked pepper, and sea salt
All of this was thrown together and seasoned with ground ginger, ground cayenne pepper, garlic, and soy sauce.
Tonight we had homemade pizza. Gotta love living in FL and being able to throw it on the grill this time of year ;D
Sunday: skinny bang bang shrimp skewers, some kind of asian slaw/salad Monday: coconut curry chicken with green beans and rice Tuesday: black bean burgers and french fries FIL bought when he was here and decided to grocery shop for us not realizing we don't really eat frozen foods Wednesday: baked pork chops, sweet potatoes and green beans Thursday: spicy meatballs over angel hair pasta, green beans if there are any left
For some reason, lunches are so hard to plan. I always start the week with good intentions and end up going out with coworkers a few times. Bad for my waist and my wallet!
