One of my 2013 goals is to incorporate more grains into our meals. Does anyone have any recipes that you love? I'm thinking along the lines of wild rice, farro, barley, quinoa, etc as opposed to whole wheat pasta or bread dishes.
I agree with the salad suggestion. Barley/arugula/pomegranate seeds is a good combo. Farro/arugula/heirloom tomatoes/peaches is great in the summer. I recommend checking out www.edibleperspective.com/ and ohsheglows.com/ for recipes.
I love this stuff! I usually serve it with pan seared fish or shrimp, but it makes a fantastic lunch for the next day. The flavors really soak in overnight. Depending on how much quinoa and veg you throw in, you may need to make more dressing.
This is one of our favorites, and is in regular rotation. I usually double the ingredients for the tomatillo sauce, because it is a little labor intensive and I like to use it for other dishes as well.
I'm on my ipad so it's too hard to link but Whole Foods has a lot of recipes on their website. I've made a quinoa, hazelnut, and arugula salad that was amazing. They also had a one pot meal of millet, chicken, mushrooms, and chard or kale that was really good too. Smittenkitchen.com has a millet banana bread that is really good too.
On davidlebovitz.com, he has a recipe for a wheat berry and roasted vegetable salad that I really like. I make it a lot on Sundays to have for lunches for the week.
