That's tough.. I have 2 things I'd do and keep going back and forth on which ones better. I'd love a bigger closet, but not as much as:
-Craft room. There are SO many projects I want to do and if I had a nice space for it, I think I'd do more of them. I'd want it all professionally organized too, so I could find things easily. I want space to sew and scrapbook mostly.
-Home gym. I want an area where I can pop in a DVD and have the room to do it without moving anything. I'd also love a treadmill and weights. Maybe having everything I need in my house would get me more motivated. Plus it would (eventually) save on the cost of going to the gym (though the gym at my work is cheap).
I like the idea of a home gym but I like the act of going to the gym and working out with other people. Working out at home alone is kind of boring. We have a treadmill and it's meh.

I'd love to have a workout room or an indoor pool......just someplace to exercise while the kids are napping. A playroom for the kids is high on my list right now since all of their gifts have overtaken both the family and living rooms.
I have always dreamed about a clothing/dressing/laundry room.... so i never once have to take clothes frmo one room to another.... just keep it all in one place - where it's stored, washed, folded, put on, etc.
it would have lots of racks, drawers, etc plus 2 washers and 2 dryers- a big table in the middlle, comfy couch and TV to hang out on while i fold.... big mirrors and some screens to get dressed behind (bc my whole family's stuff would be in there- so the boys/I can have some privacy when putting clothes on).
We have a home gym in our basement. We also have a bar and a TV room with big comfy couches in our basement, plus DH has his desk (he WFH regularly) down there. We have a sitting room off our bedroom and 2 adjacent WIC.
I'm not crafty or anything, so I don't need/want a craft or sewing room.
The only thing we'd probably add is a sauna somewhere. If we're talking about additions, we'd put a 3 season room off our kitchen, where our deck is now.

I had to run after posting the question, but I just read through and I love some of these ideas.
I would love a library/study/writing space (with a big window seat, and a fireplace for cold days), but it would need to be soundproof with a door I couldn't hear the cat scratching on; it's like he knows when I'm sitting down to write and does everything he can to distract me!
And the attached bathroom would definitely be converted to a darkroom.
Trying for #3; FET 8/18 -- BFN. Leaving things up to chance for now... After three years, three IVFs, and two FETs, we finally have our miracle babIES!
We have two spare rooms - one is a guest room with a bookcase, and we sleep there in the summer because it's cooler than our master on the second floor. The other is just an empty room where we keep the catbox. And MH uses the finished basement to play video games.
I honestly don't have a desire for a specialized room. My only real hobby is cooking, but even then I'm not too interested in getting fancy equipment or starting a food blog or anything.
I "want to want" to like fashion and girly stuff, but I really just can't get interested in it. It might be due to my weight issues, but even when I was pretty thin I still wasn't really interested in fashion.
Honestly, I would just love to have a guest room. I don't have any hobbies or interests that require a room, but I hate that MIL (our only over night guest so far in three years) has to sleep on an air matress in the family room because we lost our two bedrooms to kids.
I was really psyched about being able to have a guest room when we bought this house, but it's like pulling teeth to even get some of our loved ones to visit
Home gym. Puzzle mats on the floor with a stack of crash pads. An elliptical. Sand bags hanging from the ceiling. Training weapons (I do taekwondo). Floor to ceiling mirrors. A barre.
I would love to have a cozy reading room with very comfortable chairs and a couch. I would also love to have a little wet bar with a coffee maker and a fridge so that I could drink the beverage of my choice while reading. Ahhh!
But really, I'd make an extra room my boudoir, complete with antique vanity, fainting couch, closet space, all kinds of girly crap, and general sitting around being lady-like and lazy space. With a tv.
We did it when we moved into this place - we turned a very small bedroom into a closet room. It cost us about $300 in supplies, and even though we are renters it is SO, SO worth it. Same sex female couple = lots of clothes.
I would love a library/writing room. Something similar to snapplegirl's vision, except with a place to write would be amazing.
We have an office off of our main den right now that I'm trying to convert into "my" space. Sadly, my imagination and our budget aren't seeing eye to eye right now.
We've paid a premium so I can have my own home office with a door, as well as a separate guest room. I will never go back to setting up my laptop on the dining room table or in a corner of the living room. I would grudgingly go back to being kicked out of my office whenever we have guests if we had to do that, but I much prefer keeping the two spaces separate.
I can do yoga on the floor of my home office, too. Yoga and writing are my two main interests, so this is enough to keep me happy.
Adding. I would really like a room for the cats. A place where I can put a cat tree, hammock, their little box, toys etc. I don't like all of this stuff in my living room.
