The easiest is salsa chicken. Throw frozen chicken breasts in the crock pot, add a jar of salsa and some sliced green pepper. Cook on low 8 hours. When done, shred it, put it in a wrap with some sour cream and maybe some shredded cheese. So yummy.

Italian Beef in the crockpot. There are tons of recipes for it on All Recipes. I use one packet of dry Italian dressing, a jar of pepperoncini with half of the juice drained, a cup of water and a 3 lb. roast.
onceamonthmom.com/crockpot-mongolian-beef/ That's good, but it's a small recipe. Either double it or cook it in a smaller container in the crockpot to prevent burning (I use my rice cooker insert inside my crockpot).
Pork tenderloin, 1 sliced onion, a cup of apple juice/apple cider/water, a bag of dried cherries (I couldn't find these so did cherry flavored craisins with success), a teaspoon of dried thyme, a tablespoon of quick cooking tapioca (this is a great thickener for any crockpot meal).
I make my own chicken broth in the crockpot ... when I roast a whole chicken or if we have bone-in pieces, I save the bones in a Ziplock freezer bag. I also save vegetable scraps (tops of onions and carrots, leftover celery). I toss all that in the crockpot with salt and whole peppercorns, garlic bulbs, a splash of vinegar, and enough water to cover it. I've also done vegetable broth - same recipe minus the bones.
This looks so darn good. I am adding to the menu this week.
I buy those huge packs of chicken thighs (for, like, $4 a package!) so there have been months where we've had this meal a LOT. So much that MH, who never complains about what I make, asked me to please make something else.
