Lurker here, but I am so glad you asked this! This is exactly what I"ve been thinking about doing but want to keep FX as well (American Horror Story). I'm looking forward to the responses.
You could see if you can buy a season pass for the Walking dead on iTunes.
Espn has an ap on the computer where you can watch some things. I can't remember if it costs money. Sports is the hardest thing about not having cable.
Anything local and live you can watch with an antenna.

We don't have cable, and I've been trying to figure out how to get ESPN. I found PlayOn which seems to have good reviews on here. It has ESPN but I don't know about AMC. It costs $40/lifetime and streams through a Roku or game console.
We have a $38 antenna from Target that gets 16 good quality channels. It has the local channels and is not like the old rabbit ears at all.
If its just the one show, I would go to a friend's house to watch, wait until it came out on DVD or download on iTunes or Amazon.
More channels are expanded to Amazon, Netflix, etc. I just saw FX started doing Sons of Anarchy and AMC has pushed at least some seasons of Breaking Bad out.
Yeah, cancelling cable and getting an antenna means you pretty much only get the networks and PBS, and a few other misc channels. No AMC or FX. You'll need a cable package. ETA - we purchased AMC shows on Amazon. It was still cheaper than a monthly cable package, but we only were watching Walking Dead and Breaking Bad.
We just went back to having a cheapo cable package because reception is crappy in our area. Ask Uverse what the cheapest cable plan is - I've been seeing ads for $25/month.
FYI we had Uverse before we quit cable, and it was awesome.
We cancelled cable a little over half way through the American Horror Story season and I have been able to buy to remaining episodes for 1.99 each from Amazon.
The effects of the loss of ESPN are still a small concern but with an antenna we still get local channels for some sports.
Other than that I just wait till it shows up on Netflix or Hulu plus

I know you can get Walking Dead because I remember seeing it on one of the menus. I don't remember if it was free or paid, but I know it's available.
We ended up keeping the "limited" Comcast cable package ($18/mo) and internet so my H can watch ESPN through Comcast's homepage. If you switch internet companies (great price, btw!!), that's not available to you. But, it's worked well for us.
We buy cable series on Amazon video. Some you can do as they air (The Walking Dead is one of them, we've also purchased The Closer and Breaking Bad), and others you have to wait until the whole season is released (Dexter, Homeland).
ESPN is a bit harder. You can watch ESPN3 streaming for free, but things like Sportscenter you can only watch if you have certain cable or internet providers. Sounds like PlayOn might be a good option to explore.
For networks, it depends what you watch. We have a ROKU and watch 99% of our network television through Hulu on the Roku. We have rabbit ears for network things we want to watch in real time, but we rarely use them. The only things we've watched "live" in the last year is the Olympics and election returns.
