I hard boiled eggs last night. I took them out of the water at 11 and thought H would put them away when he got home. When I came downstairs at6:30 this morning they were still on the counter.
I hard boiled them to take a few for lunch today. Should I scrap that plan, or go with it??

I don't eat eggs but it seems to me that I see people tote these around with them not refrigerated and after easter, I feel like they sit in our baskets and people still eat them
I would eat them. It is my understanding that uncooked eggs don't need refridgeration.
That was my thought, too. However, in my googling I found that the reason for that is a protective 'cuticle' which occurs naturally on eggs' shells. Unfortunately, it gets obliterated during the processing done in this country. So, I guess it'd be different for store bought and farm fresh eggs.

We buy farm fresh. I still refridgerate them out of habit though.

You can leave farm fresh eggs out for a while. Eggs are age about 1 week on the counter vs 1 month in the fridge. I would probably eat them if they were farm fresh
