I'm glad you have been persuaded to adopt if you do get a cat! If you get kittens, get a pair so that they'll take out their extreme energy on each other.
SO many cats are euthanized in shelters One of my co-workers recently bought a Burmese kitten from a breeder (not sure how reputable), but I don't think there's any way her cat will love her more than my rescues love me. I got one at ~2 years and one at ~6 months. I never thought I would like cats as much as dogs, because my only experience with them was friends' cats slinking around the edge of the room. But now, I can't imagine not having cats!
"the thing is that pretty much every cat I've ever met is really attached to its owner. They are of varying degrees of super duper cuddly and varying degrees of sociable with other people."
This exactly. I have a LOT of years of experience with cats between working for a vet and doing rescue.
First of all, we had a lot of cats returned to our rescue for being too affectionate. I'm not kidding. People adopted them with the stereotypes in their head of cats being independent. They were surprised when this furball was following them around, wanting to sit on their lap. They brought them back and we'd actually try to match them up with a less needy cat.
All pets love their owners. They simply have different levels of demonstrating it. And don't be fooled that all dogs are super demonstrative. I have a dog who will never lick your face (which I like actually) and she doesn't get off her bed to greet us. She's part chow and maybe that explains her aloofness. But she loves us, no doubt in my mind.

You should think about a Siamese cat! Easier to find in rescues than a Burmese, but a super close relative and similar temperament.
I adopted my 2 Siamese cats as adults from a rescue group. They are VERY social and love their "people." They follow me around, sit in my lap wherever I am, sleep with me at night.
I have both rescued and bought cats from reputable breeders. I agree with fostering to adopt if you want to see if the personality meshes with your family. There are plenty of breed-specific rescues out there. My personal favorite breeds are Abyssinian and Oriental Shorthair, I know where I live there are rescues for both.
I see nothing wrong with buying pets from reputable breeders (not to be confused with backyard breeders). Not all breeders are equal. Do your research, learn the difference between the two and enjoy your pets with a clear conscience.
