I know there are lots of other ladies on here who do Paleo. I have no problem with leftovers for lunch, but DH hates them! He also hates the "make a big pot of something and then eat it all week" method. He's driving me nuts!
What do you bring for lunch or have you seen good ideas on blogs? I need something to send with him so he stops eating out every day!

I cook up a bunch of steak and chicken on Sundays and pre-portion it out for the whole week. For lunch at work I'll have a portion of chicken or steak with a big bowl of cauliflower rice (if I have some) & veggies. I keep a few bags of frozen veggies at work and also sometimes bring in containers of sauteed veggies.

I'm another leftovers fan. Typical things I eat for lunch are pork roast, beef roast, roasted chicken, chicken lettuce wraps (messy though), taco salad (just seasoned ground beef and salad with veggies), meatballs, chicken sausage, hamburgers, steak, spaghetti with spaghetti squash, egg drop soup with chicken, stuffed bellpeppers. I usually pair with one veggie like brussel sprouts, green beans, zucchini and squash (sauteed or grilled), sauteed mushrooms, cauliflower fried rice, sauteed peppers, cucumber salad, etc.
I eat a lot of salads, burgers with no bun or just some browned ground beef mixed with salsa. I am lazy so my lunches are pretty basic and I can eat the same thing every day for lunch and be fine.
You can also do something with the leftovers. For example, DH will make a huge steak for dinner, we eat half, and then we have half left over. I will eat the leftover steak on a salad, so it's a leftover, but it's a different meal.
joenali - If I don't do it, he won't. It is what I choose to do so we aren't wasting money on take out every day. I make my lunch and DS's anyway, so doing DH's really isn't much additional effort. My mom has packed my dad's lunch for my entire life, it is just the norm for me.
