How do you know if lunch meat is turning?

I still feel like a big banana not knowing this. I had bologna for lunch, but I wasn't 100% sure on it. I defrosted it last Wednesday and it's been in my fridge ever since. It wasn't slimy and smelt, well, like bologna and nothing more. Please tell me I haven't poisoned myself

The smell test is tried and true. But with deli meat, I also look for that nasty shiny look to it, like acid rain or something
