I am getting bored- sweet potatoes (making them every healthy way possible), wheat rice, brown rice, quinoa, plain white potatoes, plain veggies, side salads.

I love butternut squash right now. I roasted it with some yukon gold potatoes. Yum. I also have butternut squash soup on the menu for next week. I am trying to figure out how to cook asparagus. That is also on the menu for next week. Other common sides- zucchini, green beans, and salad (regular green or spinach)

we roast most of our veggies - carrots, broccoli, potatoes, sweet potatoes snap peas sauted with some olive oil and tossed with garlic and red pepper flakes and a dash of sesame oil green beans sauted any number of ways. brown rice/quinoa we've been trying black rice lately - DS loves it and it's pretty good. not high on nutrition but we love corn
Growing up we ate a lot of buttered noodles (lightly buttered!) tossed with a can of mushrooms. As long as you are using wheat pasta and not smothering them in butter, I think that's relatively healthy (depending on your view on carbs, I guess).
My DH isn't a huge pasta fan so we don't usually do that in my house. I think most of what we do has already been covered by others.
My other go-to veggie side is kale in the toaster oven. I toss with olive oil and salt then roast very quickly so it's just wilted and slightly crunchy.
Steamed broccoli and salads are other good options for us. Roasted brussels sprouts with bacon are delicious too! In the summer we grill veggies a lot.
Saute garlic and olive oil together for a couple of minutes (don't let the garlic get brown and burn). Then, you can add spinach, cauliflower (if so, I like a little red chili pepper flakes in mine for kick), cabbage (for this, I add pancetta or bacon for flavor), mushrooms, etc.
Peas and sauteed onions in olive oil are delicious as well. If you need a carb, you can add pasta and even make a whole meal of this.
Do you like roasted tomatoes? You can half plum tomatoes, which are supercheap, sprinkle a little salt, pepper, minced garlic, sugar and balsamic vinegar over them and roast in a low oven, like 300, for 30 mins.
