This is the first week we actually have a plan for our dinners!
Sunday: Twice Baked Potatoes with Shrimp Monday: Tacos Tuesday: Pulled Pork in Crock Pot Wednesday: Pasta Thursday: DH is making dinner -- he didn't tell me what it is yet! Friday: Chicken Wings

I meal plan for two weeks at a time since I shop twice a month. Here is what we have planned for the next two weeks:
Crockpot beef stew Chili and skillet cornbread Chicken pesto pasta Pulled pork sandwiches Baked chicken with sides Steak and sides Beef and sausage spaghetti in the crock pot Leftovers
We go to dinner once a week at the in-laws and my DH isn't home for dinner on Saturdays.
Grocery shopping isn't until later this week, but I can speak to what we'll have until then.
Tonight (Mon): ham, veggie and cheddar crustless quich w/ beef, barley and mushroom soup and homemade biscuits Tues: shephard's pie (because the post earlier remineded me it's been ages since we had it, and we have everything we need for it in the apartment) Wed: Tuna Noodle Casserole
Later than that, no clue. We're having some folks over for supper on Saturday, so I'm going to try to find a roast and have it with mashed potatos and an as yet undecided veggie. Depends on what they have at the commissary...
Monday- Paleo Orange Chicken, Cauliflower Rice, Stir Fry Vegetables Tuesday- Haddock, Roasted Sweet Potatoes, Green Beans Wednesday, Thursday, Friday- I work, so DH is on his own. Saturday- Rogan Josh (Indian Beef Curry), Cauliflower Couscous, Salad with Champagne Vinaigrette Sunday- Pizza! and Salad. My Whole30 is finally done. This will be my first meal with gluten and dairy in a month! Wine will be included as well.
DH and I went on our big once-a-month Cotsco run, and then went to an asian grocery store for the veggies and spices. We'll usually stop at the grocery store mid-month for milk and miscellaneous stuff, but I try to do a once a month big run to avoid the store if I could, since smaller runs tend to add up. Dinner planning so far are:
Last Saturday: Garlic butter scallops over pasta Sunday: Beef shank with peanut butter curry sauce Monday: left overs Tuesday: Seafood medley stew (fish, scallops, shrimp) with string beans, eggplant, chinese cabbage on a tamarind soup base; brown rice Wednesday: Lettuce cups:minced chiken with carrots, celery, and jicama; sweet and sour sauce Thursday: Stuffed bell peppers with ground beef, over pasta Friday: likely salad with ranch dressing, cucumber slices Saturday: Chicken thighs with eggplant, coconut milk, string beans; brown rice Sunday: we are bringing Angus beef burgers to the SB party
Next week(s): Orange glazed chicken breast Mung beans with pork rinds, eggplants, and bittermelon Fried noodle with bok choy and other veggies Stir-fry with cauliflower and other veggies Beef stew with potatoes and other veggies Cured meat (Tocino) and olive-oil grilled zucchini sides Chicken adobo Cured sausage (Longganisa) over a bed of veggies Black-eyed peas Beef kalbi Teriyaki chicken Beef bulgogi Sweet and sour chicken Menudo Italian sausage over pasta, likely marinara sauce
Do you have a recipe for the black bean pork chops? They sound interesting!
They are so easy! I use 4 chops so we have leftovers. Put s&p on chops and cook on both sides until nearly done. Add 1 can black beans and 8oz fresh salsa and fresh cilantro. Cover and cook until chops are done and beans heated. We usually eat with white rice or Spanish rice.
