cat19 oddly enough shortly after the original post I started a sponge for bread myself! I finished it after B went to bed and it's going through it's first rise now.
B decided she didn't want to play by herself anymore so I had to *gasp* actually play with my daughter. But, here's the best part, I nursed her before bed for 10 minutes as usual, but she was completely wide awake at the end, and I laid her in her crib anyways and she did not cry at all but went right to sleep! *happy dance*
Hm. Would you ladies like my recipe for Focaccia bread, buttermilk biscuts, buttermilk scones, or chocolate coffee cake with mocha buttercream frosting? Pick one.
Forgive the rather sparse directions. I'm copy & pasting.
Chocolate Mocha Cake
2 cups packed dark brown sugar ¼ tsp salt 1 ¾ cups sifter all-purpose flour ¾ cup sifted unsweetened cocoa powder 2 tsp baking soda 1 tsp baking powder
1 cup buttermilk 1 cup strong coffee, room temperature ½ cup veg. oil 2 eggs
Oven: 350F Bake:25-30
Grease and flour 2 9” cake pans Sift dry ingredients together in bowl Whisk wet ingredients together. Mix wet into dry ingredients. Pour into pans. Bake.
Stir together sugar, eggs, coffee and vanilla in the top of a double boiler, stirring constantly. When mix is warm, add chocolate. Continue stirring, cooking over just simmering water, until thickened 10-15 min. Cool, preferably overnight in refrigerator. Beat soft butter until light and fluffy, 10 min+ on med speed. Gradually beat in chocolate mixture. Continue to beat until the frosting comes together.
