It's Monday and time to get our menus on. What's cooking this week?
Sa - enchilada casserole Su - butternut squash soup and braised kale M - pork and broccoli stir-fry with brown rice Tu - Old Bay–seasoned fish, roasted potatoes, green beans W - leftover enchilada and beets Th - crab and avocado salad wraps with shredded cabbage and carrots Fr - black beans and rice
I have the following big ingredients: Leftover burgers, steamed broccoli, chicken, spaghetti squash, red/orange bell pepper. So anything I can make with those.
I did buy some thai green curry sauce, so maybe a stir fry with spaghetti squash and peppers and chicken tonight.

I have no idea what I'm eating this week. Although I do have 7 lbs of browned hamburger in the freezer (in 1 lb packages). So at least I have that part done. We may have tacos tonight.
