I also really enjoyed this book and never thought it was boring. I don't think the flow really changes throughout so if you're not enjoying it now you might never enjoy it.
It has been a few years since I read this book but I also really liked it and don't remember it being boring. The book follows the family members into the future as the children grow up. Some of the life paths were surprising to me.
It's Barbara Kingsolver, so it's social commentary with a very liberal slant. The ugly Americans come to Africa thinking they're going to change Africa but Africa changes them, some for the better, some for the worse. It's a very character driven book, so while there certainly is a plot, it's much more about the characters themselves.

I really enjoyed the varying points of view in this one because of the character insights it provided.
