This weather needs to shape the hell up. I haven't been able to get my spiles (tree taps) into the trees because it's been below freezing here mostly. Today would have been a good day for sap but my Husband doesn't have the right size drill bit. We were going to go tomorrow morning to get one and put them in tomorrow, but they are calling for ice and snow. Ice + snow = non-sappy weather.
I really want to get them in and try this out so I can write about it like some hipster blogger.
Cook the water out of it and then cook it until it turns into syrup. You can cook it to any point you'd like, light syrup, medium, or dark. Darkest is obviously thickest.
If you want to sell syrup it needs to have a sugar content of 66 though.
ETA: The trees are sugar maples. You can make syrup from birch trees too.
