Are you strategic about them? I'd like to go run today, but I went to CrossFit Tues, Th, Fri and yesterday. I was planning to rest today-but it's relatively cool and cloudy out!
I take one complete rest day where I do nothing (Thursday) and one active rest day where I go for a walk, do yoga, core work, or something easy (Sunday).

I'm not really strategic about it. I alternate between running and strength training so that I don't do either on consecutive days. I usually take Monday as my total rest day, but if it doesn't work with my schedule for the week, I am okay moving it. I also do one day that might be considered more "active rest" than exercise. I'll jump on the elliptical, 2mi walk w/ the dogs, mow the grass, etc.
Lately I don't plan rest days, life gets in the way enough. In the past I've aimed for one day of complete rest, but if I had an opportunity to run in nice weather I'd definitely do it (and rest another day)!
I usually take Friday as my rest day, but I've been known to skate or mountain bike if the opportunity and the mood strikes. I don't really worry about it. I've got a good 30-40 pounds to go, so I don't think I'm in any danger of overdoing it. LOL.
I mix it up a lot, too, so I'm not really concerned about overuse or recovery. If anything, my routine could probably use a little more focus and direction.

I usually rest on Saturday because we have family events going on and I can't fit in a workout. But "rest" is relative, because I'm still chasing after a toddler.
I almost always take two rest days every week completely off from riding. One is always Fridays b/c I'm exhausted from the work week and want to be well rested for the weekend rides. The other is usually Tuesday or Wed. depending on my training, what other things I have scheduled, etc.
I don't have actual "rest days" since even on my rest days I walk 3-4 miles a day in addition to any workouts. I do try to make sure I get one day to not work out hard since I am still a beginner and would hate to get injured.
I doubt it's going to hurt you to work out today and rest tomorrow unless you're near the point of exhaustion. I often re-arrange my rest days based on weather forecasts. The important thing is just to make sure you do allow your body to rest and recover.

I am not really strategic about it. I mark on a calendar a workout of somekind for every day but if i get a chance to play with my nephew or have dinner with a friend then i would forgo the workout thus forcing a rest day!
but i don't take more than 2 per week - otherwise i notice a major difference in endurance/strength
My rest day is usually Thursday. I typically CF on M, W, F, Sat and do a semi-intense run on Sun. Tuesday night is a leisurely run pushing DS in the jogging stroller.
I'm flexible, though, because life happens, it rains, or we have other things to do in the evenings. I usually just go by how I'm feeling.
