Snacks? Cheese, soy crisps, greek yogurt (has dairy carbs but makes up in protein).
What are your exact requirements? How low carb? Is this for health reasons like diabetes? Are you looking for low calorie and low carb? Any dietary restrictions?
I had weight loss surgery 6 months ago so my diet is supposed to be high protein, low calorie and low carb. I am constantly looking for new things to fit into my new eating lifestyle but it's hard to recommend if you have other things you're looking to gain.
I love margarita chicken. Bake chicken breasted with a fresh bazil leaf and a slice of tomato on top then add a slice of fresh mozzarella on top when the chicken is cooked through.
Snack- pepperoni chips. Put turkey pepperoni in a single layer on a plate and microwave for 1 min 10 seconds. They become crispy like chips. I love those with a wedge of laughing cow light cream cheese
I do "low carb" as in no starch (veg are in, no pasta/rice/potato, avoid pulses) and low calorie/slightly higher protein.
Go to meals include
chicken salad: mixed leaves, grilled chicken and any or all of the following: peppers, tomatoes, mushrooms, cucumber, avocado, fennel, grilled halloumi. Olive oil/lemon juice dressing with whatever herbs I've got on hand.
modified salade niçoise (tuna is too pricey here): salmon steak served on bed of mixed leaves with blanched green beans, shavings of fennel and (not quite) hard boiled eggs. With a diet mayo/lemon juice/chive or spring onion dressing.
chicken or beef brochettes served with salad or coleslaw.
meat or fish of any kind served with roast veg (any combination of courgette, aubergine, peppers, tomatoes roasted in a tiny bit of olive oil with onion, garlic & herbs). Also really good with feta or halloumi on top. Bonus points if meat is also roast so no standing in the kitchen required once everything is in the oven.
same combination of veg roasted with some chicken sausage cut up on top. One pot meal. You just need to give the veg 10 minutes headway.
smoked fish omelet: any kind of smoked fish + chive or spring onion. Served with mixed leaves salad.
chicken leg with beetroot/ricotta stacks: mix ricotta with lots of pepper & chives. Stack with slices of beetroot. Roast chicken leg.
Looking forward to reading answers as it's quite obvious I need to vary from my meat or fish + salad routine...
I don't know how low-carb you go, but almonds are fairly low-carb and are a good snack. JUST DON'T EAT MORE THAN ELEVEN. (lol, *pours one out for IMMM*)
I had some almonds last night and couldn't help count them Stopping at 11 was harder though.
Snacks: babybel olives carrots, celeri, cucumber or peppers with hummus or tapenade or "diet" blue cheese dip (blitz some blue cheese with 0% cream) cherry tomatoes berries yoghurt petit suisse with a bit of salt/herbs

i started making this delicious thing for breakfast but i eat it all the time.
saute chopped mushrooms, an onion and garlic
brown 1.5ish pounds of ground meat (i use venison but that's bc we have a shitload of venison)
cook a pound of bacon in the microwave on paper towels. i read that bacon in the micro with the grease soaked in the paper towels are 25-30 calories each piece.
mix all that with 12 scrambled eggs (last time i made it, i used 6 whole eggs and six whites) and a half cup of shredded cheese.
i poured my mix into a 9-13 cooking sprayed pan, sprinkled another 1/2 cup cheese on it, and baked for 30 min in 350 oven
so good for breakfast, but we actually had it for dinner last night. i go ahead and cut it into portions, and then just grab one on my way to work.
Thanks Squirrel. Mia pretty much eats the same every day too - Greek yogurt, veggies and hum, fruit, as well as starches (sandwich, crackers, pasta or rice). We just bolus, bolus, bolus. Everything in moderation.
We use a salter scale but will definitely check out that site. That looks fantastic. It's so hard to guesstimate with recipes and servings.
Balsamic Chicken: Split two chicken breasts and lay out in a 9x13 baking dish. Season chicken. Scatter a container of cherry tomatoes, a container of sliced mushrooms, and a handful of chopped basil on top of the chicken. Mix 2T balsamic vinegar into 1/4 cup water and pour it over everything in the pan. Bake at 400 for 30 minutes. Pull it out of the oven, add some sliced mozzarella, and put back in the oven until cheese is melted.
